Damaris Phillips Instagram – 1/2 pound Chocolate Chip Cookies
Ingredients:
2 sticks (8 ounces) butter, room temperature
1 firmly packed cup light brown sugar
1/2 cup granulated sugar
2 large eggs
1 tablespoon vanilla extract
3 cups bread flour
2.5 teaspoons baking powder
1 teaspoon fine salt
10 ounces dark chocolate chips
Method: Preheat the oven to 375 degrees F and line 2 cookie sheets with parchment paper.
In a large bowl combine the butter, brown sugar, and sugar using a hand or stand mixer until well combined. Add the eggs one at a time. Add the vanilla. Mix until well combined. In a separate bowl whisk together the flour, baking powder, and salt. Add the flour mixture to the butter sugar mixture and mix until a dough is formed. Stir in the chocolate chips by hand. Save a few to place on the top.
Divide into 6 even dough balls using a scale. They should be roughly 8 ounces each. You can also eyeball it if you don’t have a scale. Form the ball into a 4-inch puck with a flattened top. Place 3-inches apart on cookie sheet. If you stagger you should be able to fit at least 3 on each sheet. (You might have to bake a third tray… that’s just the price you pay for huge cookies!) add a few chocolate chips to the top and press gently to make them stick. Bake until edges and bottom is golden, about 15-20 minutes. Remove from the oven and cool cookies on the pan on the counter for 5 minutes before moving them to a cooling rack.
