Jasmine Roth Instagram – We did it again! 😊 Had the best time being a #KitchenAidAmbassador this weekend.  Loved talking all things kitchens at the @seniorpgachamp as a guest of @kitchenaidusa.  I got to watch some golf, explore a little bit of Michigan, meet so many great people, and even cook in front of a crowd with @brettrothofficial – yikes!

This year’s recipe was so fun because it’s a salad even @themeatatarian approves of, which you know is a big deal.  And it’s perfect for meal prep or even party prep for a BBQ!  So without further introduction, here’s the recipe: 

“Viral BBQ Chicken Meal Prep Salad Jar”.
Ingredients:
– 2 Boneless Skinless Chicken Breasts 
– BBQ Sauce – Brett likes “Lillies Smoky Barbeque Sauce” right now
– Olive Oil
– Salt & Pepper
– 2 Ears of Grilled Corn, Cuff off the Cob 
– Diced Red Onion (Optional)
– Diced Red Pepper
– Cilantro
– Fresh Spinach
– Diced Cotija Cheese
– Wild Rice

Method:
Dressing – Brett’s not a big fan of vinegar, so we’re keeping our dressing really simple.  Whisk together 1 cup bbq sauce, 1/2 cup olive oil, 1 tsp garlic powder, salt, pepper.  Chill covered in refrigerator while prepping the rest of the food.  If you like vinegar like I do, you can add apple cider vinegar to this.  If you wanted to change this up, you could use buffalo sauce instead of bbq sauce.

Pull chicken breasts, grill corn and cut off cob, cook wild rice, dice red onion, red pepper, and cilantro, lightly chop spinach.

To assemble, start by adding 1/4 cup of dressing in each jar.  Layer red pepper, red onion, corn, cheese, spinach, rice, chicken, and cilantro.  Chill in the fridge until ready to enjoy!
