I love being able to eat gluten and dairy free desserts that are loaded with nutrients and good fats. You can satisfy your sweet tooth while still being good to your body 🙌🏻
Who’s making these?
Ingredients:
– 2 ripe bananas, sliced into rounds
– Almond or peanut butter
– 1 cup dark chocolate chips
– 1 tablespoon coconut oil
– 2 tablespoons coconut cream
– 2 tablespoons protein powder (optional)
– Shredded coconut for topping (optional)
Instructions:
1. Spread almond or peanut butter on half of the banana rounds and top with the other half to make banana sandwiches.
2. Place the banana sandwiches on a baking sheet lined with parchment paper and freeze for about 1-2 hours until firm.
3. In a microwave-safe bowl, melt the dark chocolate chips with coconut oil in 30-second intervals, stirring in between until smooth.
4. Stir in the coconut cream and protein powder into the melted chocolate mixture until well combined.
5. Dip each frozen banana sandwich into the chocolate mixture, using a fork to coat evenly. Allow any excess chocolate to drip off.
6. Place the chocolate-coated banana bites back on the parchment paper and sprinkle with shredded coconut if desired.
7. Freeze the banana bites until the chocolate is set, about 1 hour.
8. Once the chocolate is firm, you can transfer the banana bites to an airtight container and store them in the freezer until ready to enjoy.
