Fun fact when I found out that I’d be competing on chopped sweets, learned to rework everything I knew about baking and pastry. I practiced unique techniques using liquid nitrogen, the blast chiller and the microwave. One of my favorite recipes to come out of that time was my 1 minute chocolate ganache.
