Poh Ling Yeow Instagram – Have you ever tried Chestnut mushrooms? I haven’t until now. And cuz I’m a doofus I somehow only thought to start filming post the mushroom stir fry which was simply olive oil, garlic, shaoxin rice wine, oyster sauce and light soy. Instead of rice I thought a slippery on slippery texture would be nice so handmade noodles using a flour, hot water and alkaline dough it was. Seasoning on the noods was Szechuan chilli oil, light soy, Chinkiang vinegar and sesame oil with a dash of sugar for balance. It’s such a quick wholesome meal to make. The comforting Chinese flavours were great with the Chestnut mushrooms which have a uniquely vibrant crunch & tolerates a lot of cooking. If you’re curious to try some these were from @choicemushrooms @adelfarmmarket but really, any of their mushrooms would suit this recipe idea.
Sidenote: my mushroom mates told me these are tricky to handle & sell because their spores drop everywhere like cocoa powder and make the product less attractive to the consumer but I’m here to endorse the messy-ness of nature is often where deep flavours lie. For eg. Have you ever picked up a slightly wilted looking strawberry (different to soft and rotting!)?
