Course 1: goat cheese stuffed morel, celeriac puree, pickled mushroom, crispy garlic
Course 2: miso glazed scallop, micro greens, shiso, pickled candied kumquats, black sesame, avocado mousse
Course 3: fresh agnolotti (little pasta pillows) filled with handmade ricotta and lobster, in a lobster cream sauce with Parmesan crisp & chives
Course 4: poached petrale sole, asparagus, dashi better blanc, herb oil, vegetable ash, togarashi rice cracker
Course 5: spring lamb loin chop, buttered leeks, confit pearl onion, snap peas, mint and pea puree, watercress, jus
Course 6: intermezzo – pineapple & meyer lemon sorbet
Course 7: phyllo pillow filled with pistachio pastry cream in a sugar basket with rose syrup & petals
Luckily, my sous chef @bejisima always has my back (and the pastry department!!) And I had some excellent servers @nikos_karmira and Hazelle. And not to mention my marketing team @cunharicchio – thank you all!! It takes a lot of work to get an event like this together but I can’t imagine doing anything else 🥰
