Vankaya Pachi Pulusu

2 Long eggplants
3 Green chilies
Roast them till charred on an open flame

Peel the baingan
1/2 cup Madras onions, peeled
Crush them well
Add the roasted baingan
roasted chilies
1 tbsp Jaggery
A handful of fresh coriander
Salt to taste
1 tsp Red chili powder
Pound everything well
till a coarse texture

1/2 cup Imli ka paani
Add the baingan
Mix well

Add a tadka of
oil, mustard seeds, jeera, chilies
