I stuffed whole eggplant (get small ones for this!) with lots of garlic, parsley and cheese, then simmered in a lovely sugo for a couple hours. It’s like a vegetarian version of bracioletti I kid you not! Joe was convinced the inside was stuffed with meat 🤣 he didn’t believe me when I told him it was just the flesh of the eggplant that soaked up all that beautiful flavor and got all rich and delish throughout the cooking process. I wanted to add a handful of golden raisins (just like Nonna does in bracioletti which by the way the recipe for those are in my book!) but was fresh out of those.
