GF, Grain-Free, Dairy-Free Chocolate Chip Cookies
INGREDIENTS:
– 3 very ripe bananas
– 1/3 cup soy milk (or any plant-based milk)
– 1/2 cup chocolate chips
– 1/2 cup coconut flour (or a GF flour of your choice)
– 1/2 teaspoon baking powder
– 1 Tbsp Ground Flaxseed
– 1 Tbsp Ground Chia Seed
METHOD:
– Preheat the oven to 350°F
– Peel bananas and mash them in a mixing bowl.
– Add the milk, flour, and baking powder and stir to combine.
– Add the chocolate chips, ground flaxseed and ground chia seed powder and fold into batter.
– Use a small ice cream scoop to divide into small balls and place eon cookie sheet. Smash them down because they won’t spread like traditional cookies.
– Bake for 12-15 minutes
– Let them cool and enjoy!
