Liberté Chan Instagram – RECIPE ⬇️ PESTO KELP NOODLES
If you’re looking for an alternative to pasta that’s gluten-free, low carb, low calorie (these have 6 calories per serving!), and delicious, try kelp noodles!
They’re common in Asian cooking and if you love glass noodles, you’ll love these.
The trick is to prepare them before you cook them:
– Rinse the noodles under the sink
– Mix 1/4 cup lemon juice add 1-2 tsp baking soda (it will bubble), then add the noodles
– Massage the noodles for 10-20 seconds until they soften
– Rinse again under the sink
– Add noodles to your sauce or soup (for this meal I added them to homemade pesto sauce)
ICYMI: Kelp is a brown seaweed native to Japan. The sea vegetable is known as a superfood because it’s:
– Anti-inflammatory
– Rich in antioxidants and minerals (magnesium, calcium, iron and iodine)

INGREDIENTS FOR NOODLE WASH:
– 12 oz. kelp noodles
– 1/4 cup lemon juice
– 1-2 tsp baking soda
PESTO INGREDIENTS (I eyeball it, so I don’t know the amount 🤷🏻♀️)
– Basil
– Spinach
– Peanuts
– Rice Milk
– Olive Oil
– Salt, Pepper
