I’ve been exploring, getting my daily fixes of poke, drinking all the fresh pressed juices, gathering produce from the rooftop garden, and taking in the views. I’ll be doing a cooking demo later today and a charity dinner tomorrow supporting the Kauai community college culinary arts program. Picked up some garlic scapes from the farmers market yesterday. These beautiful long, curvy stems pop up during a small window of time around late spring/early summer and have a mildly garlicy, oniony, sweet scalliony flavor. I’m quick pickling some so I can enjoy them over the next few months.
My quick pickle brine:
2 cups unseasoned rice vinegar
1½ cups sugar
2 teaspoons kosher salt
2 x 1-inch knob ginger, peeled and thinly sliced
2 garlic cloves, peeled and lightly smashed
Chili pods and other spices, optional
Bring brine and aromatics to a rapid boil, and pour over 2 cups of cut scapes (or other vegetables). Allow to cool before refrigerating. Store for several months.

I had the best little sous chefs, ladle inspectors, commis, and herb pickers helping me at work this weekend in Kauai. They persistently asked how they could help me about 57 times and proceeded to eat all my fruit. They’re lucky they’re cute.
5 days of Kauai in a minute.
It was my first time on this island and it was so healing.✨ I was catching 6am yoga, eating a lot of fruit and shaved ice with my family/nieces, and visiting the local farmer’s markets for inspiration for my dishes for Chefs by Nature with @1hotel.hanaleibay. I built an AAPI grazing board, taught a cooking class, and put on a charity dinner for 100 guests supporting the local Kauai culinary school and couldn’t have done it without @chefgingerjpierce @chefmiguelfigueroa @chriscrary @chefprestonm and the @1hotels team. We served a passionfruit kampachi crudo with Sichuan chili and avocado, a jicama mango salad, turmeric lemongrass lechon over coconut rice with scallion pancakes and calamansi-soy vinegar, and a yuzu coconut cake with charred pineapple. Thank you to all the guests that came out to support and to the students for dedicating time to help us in the kitchen. I look forward to visiting this special island again soon.
