Every Malayalee reading this will have their own family recipe for Kadala Curry . Incase if you dont, here is mine.
Bengal gram : 1/2cup soak overnight
Coconut oil
Dry red chilli 8-10
Fennel seed : 1tbsp
Cumin : 1/2tsp
Pepper corns : 1tsp
Shallots : 5-7
Ginger : 1 piece
Garlic : 8-10
Curry leaf : hand full
Coconut : 1/2 cup
Coriander powder : 1tbsp
Tomato : 2 small
Turmeric
Salt
Method:
Heat 1 tsp of coconut oil and roast red chillies, fennel, ginger, garlic, shallots , cumin and pepper. Once roasted keep that aside. On the same pan add coconut and curry leaves. Once the coconut turns brown and 1 tablespoon of coriander powder and cook for a minute and switch off the flame. Grind all of these together . Add two tomatoes to the soaked gram with enough water and add the ground paste . Season it with salt and cover the cooker and cook for 6 whistles. For the final tempering, heat coconut oil, add mustard seeds and red chillies once that starts to splatter add chopped shallots and fry tjem until they are golden brown. Finally add curry leaves and pour it into the gravy.
