Ingredients
Chicken : 500g
Jeerakashala rice : 3 cups
Coconut oil : 3 tablespoons
Ghee : 2 tablespoons
Cinnamon : 3 medium size pieces
Cardamom: 3-4
Cloves: 3-4
Star anise : 1
Stone flower : 1-2
Fennel: 1 teaspoon
Whole red chillies: 10-12
Onion : 2 large onions medium sliced
Ginger garlic paste : 1 tablespoon
Tomato : 2
Salt : as per taste
Curd : 3 tablespoons
handful of mint leaves
Water : 4.5 cups ( rice to water ratio is 1:1.5)
Method:
1. Soak whole red chillies in hot water
2. Wash rice and drain out all the water and keep aside
3. Marinate the chicken in curd and let that rest
4. Heat a heavy bottom pot or cooker and add oil along with ghee
5. Add in the whole spices (cinnamon cardamom cloves fennel and stone flower)
6. Add sliced onion and let that brown for a while
7. Add ginger garlic paste and sauté
8. Grind the soaked red chillies with little water and add the paste and cook until the oil separates
9. Add tomatoes and cook until mushy
10. Add chicken and season with salt
11. Cover and cook for 10mnts untill the chicken releases all the water
12. Once the chicken is 90% cooked add a hand full of mint leaves
13. Add hot water and rice
14. Cover and cook for another 10 mnts in medium flame
15.Cover the pot with a aluminium foil and place it on a hot tawa
16. Keep something heavy on the top and cook for 15 mnts in low heat
17. Switch off the flame and let that sit for another 15 mnts
18. Open the cooker , mix well and add a spoon of ghee (which is optional)
