Caption : 🥯 I’ve been craving homemade bagels for weeks! The recipe will tolerate up to 1 cup of sumthin’ sumthin’ – blueberries, choc chips etc. Also, in case u might ask – Skeleton & goldfish bowl is thrown & glazed by @graemerichardson67 , painted by me. Jamface tea towel designed by @sweetpetite77 but no longer available – sorry 😢. 2 tsp (7g) yeast 2 Tbs honey 2/3 cup tepid milk 3 cups plain bread flour (normal plain flour works but texture won’t be as chewy) 1 cup plain wholemeal flour 1 tsp salt 1 – 1 1/3 cup tepid water 1 egg, whisked 1/3 cup sesame or poppy seeds or sea salt Mash yeast & honey together. Add milk and stir to dissolve. Cover & rest for 20 mins or until surface is foamy. Combine the flours, salt, yeast honey milk mix & only 2/3 of the water. Knead into a pliable dough adding the remaining water if needed. The dough should knead easily & should not stick to the bench surface even without the aid of flour. Cover with damp tea towel to rise until double its original size in a warm draught free spot. Punch down dough and cut into 10 even pieces. Roll each piece into a 2cm wide sausage. Squash down one tip, bring the other tip to sit on the flattened tip and form a ring. Pinch around it to secure (see reel if unsure). Flip it over and rest on a 10x10cm square of baking paper. Repeat until all the rings are formed. Cover with a damp tea towel and allow to double in size again in a warm, draught free spot. Preheat oven to 170*C FF. Boil the bagels in plenty of water (about 30 secs each side). Rest on a clean tea towel to absorb excess water. Transfer to baking trays lined with baking paper leaving a 2cm space between the bagels. Baste generously with the egg. Sprinkle or dip in seed of choice. Bake for about 20 mins or until golden and fill with whatever your heart desires! Enjoy and oh, these freeze well in an airtight container or snap lock bag ♥️ PS Quick cucumber pickle is simply shaved crunchy part of 1 continental cuke, 1 tsp salt, 2 Tbs sugar, splash of white wine or cider vinegar. Caption : In light of it being Chinese NewYear soon, I thought I’d go pantless 😂. Jokes! The shorts seem to have disappeared under the blouse 🫢. Ok back on track with the Ang Ku Kuih, a Hokkien glutinous rice & mung bean sweet snack (actually not very sweet) which for me hold such memories of my Grandma Yeow because she always had them on tap whenever we visited. Recently I’ve felt such a pull towards traditional cooking & I’m guessing lots of Chinese Malaysian ex pats feel the same so I hope this inspires you. -TIPS- MOULDS Ang ku kuih moulds are easily found online & inexpensive. I inherited these traditional wooden ones from mum & they are the smaller size. If you can zoom in on the price tag it says $17 ringgit which is about $6AU can u believe? STORAGE They are good for 1-2 days max unrefrigerated but then you must fridge or feeeze them then re- steam on eating. Microwave or pan frying in a small amount of oil is what my Grandma Yeow used to do – delish ‘cause the edges crisp up a bit. SHAPING THE DOUGH This can’t be done with a rolling pin because glutinous rice dough sticks to surfaces and unlike wheat dough, u can’t flour surfaces to stop this or it makes the dough dry and crack immediately. ANG KOO KUIH | Makes about 25 small kuih (5x4cm each) FILLING 150g dry split mung beans, soaked in plenty of water overnight, drained 100ml water 30ml veg oil 2 pandan leaves, shredded lengthways, knotted (found fresh or in frozen section of Asian grocer) 70g sugar (90g if you’re a sweet tooth) 2 pinches salt SKIN 200g sweet potato, peeled, diced 2cm, steamed until soft, mashed well 220g glutinous rice flour 40ml veg oil 165ml boiling water 16g caster sugar Few drops red food colouring BITS & PIECES 1 – 2 banana leaves, greased well with veg oil Method is below in comments section 👇 Vase @mrbillypotter Flowers @banksiabelleLikes : 18666

We discuss being genuinely confused to be in 2nd row with all the fancy ppl & are sitting behind Harry Connick Jr & his 3 lovely daughters. I chat to them but am too embarrassed to say hi to Harry. Ceremony is roughly 4 hours. Gina & I lose each other in slow migration to bar. 2 hours pass and as per usual, recognising many people but my head is swimming. I can’t place them exactly or recall that many names & become increasingly overwhelmed. Self esteem must be improving coz in the past would be writhing like a total dropkick with terrible inner dialogue in this situ but now have no qualms withdrawing & standing in a nigel corner to decide whether to stay or tap out. Gina and I find each other again but she declares she’s wants to bop. I dig a jig (especially to tragic outdated r & b) but we’re packed like sardines in tuxedoes & frothy frocks marinating in 300% Gold Coast humidity. My feet are about to explode in heels & I can’t focus on conversations which have the added bonus of needing to be shouted over stupidly loud music. I leave the venue but decide to sit outside against a flower bed & have a genuinely restorative moment alone. There is a breeze & I can hear my own thoughts again. Then I find my ppl. Caption : Just found this in a basket of plastic string in Aunty Kim’s McGyver cave. I have a shocking memory but roughy this look is circa 1995 (so I’m around 20-21) and yes that’s my real hair which I used to curl with old school rags, because back then u couldn’t just grab a hairpiece from Temu for $10 but even if I could I woulda bin busy saving to scoot back to Utah so I could find me a Mormon husband and procreate asap 😂. Fate had other plans. This was the soundtrack of the era – probs a bit telling of my recent return from OS where I had my cherry popped by, lets just say, every mother’s nightmare, got my belly pierced, never witnessed such joyous multiculturalism and one of my my besties was trans. It was a time of rebellion, immense turmoil and philosophical change. I felt wild with wanting to be desired, and although I wasn’t a model church member, I spent most of this period cowering from my truth and feeling like a despicable sinner. Despite all this, the goal was still to get back on track and contort myself into the wholesome mould I believed would give me the stillness & acceptance I craved. Before our shoot, I’d never met Bill and it’s profound to think it would he the first and the last…..but someone had told me “He remembers everyone’s name and treats everyone the same. This is his superpower”. We did a cold shoot & without effort he made me feel like we’d been friends forever which I was very grateful for, because I was still new to the game. Caption : Firstly🌶️ is ❄️🥶 not mouldy 😅. SARDINES IN TOMATO with RICE 🐟 | Feeds up to 3 2 cups any variety of @sunrice rice 425g tinned sardines in tomato sauce 1/2 medium red onion, thinly sliced 2 long red chilly, thinly sliced 1/2-1 continental cucumber, 1/4 lengthways, seeds cut out, sliced thinly on a diagonal 2-3 Tbs ketchup 1 lemon or lime, juiced (failing this, about 2 Tbs white vinegar) OR to taste 1 Tbs light soy 1/2 tsp white pepper Cook the rice following packet instructions. Take the sardines out of the tin, split them, remove the bones and give the stomach the little scrape. Transfer to a medium bowl. Scrape any residual sauce back into the tin. Stir into the tin of tomato sauce the ketchup, lime juice, soy sauce and white pepper. Tip into the bowl together with all the prepared veg. I’ll be going to visit mum’s grave & attempt making a Chocolate Cinnamon Babka for the first time. I’m missing Mum, Rhino and Cal Wilson who made me this fantastic wreath 2 years ago. Caption : GRANDMA YEOW’S SWEET PORK BAO Makes 12 My paternal grandma is one of the best cooks I’ve ever known and these are her pork bao. As with so many of her specialties, she always had a batch in the freezer ready to steam when she was expecting us. This is a simple Nyonya style filling – sweet with onions & warmth of dark cooking caramel & a heavy hit of white pepper. If you’re not used to working with yeast – save the piggy faces for your 2nd time round as time on those may domino into over proving the bao dough which would be a tragedy! BAO DOUGH 1 Tbs caster sugar 1 tsp dry yeast 150ml warm water 360g plain flour 3/4 tsp baking powder 25g caster sugar 1/2 tsp salt 100ml warm water (add gradually as needed) 3 tsp veg oil FILLING 500g lean pork belly, skin cut away and discarded, 1cm dice * 2 Tbs olive oil 1 large onion, peeled, diced 5mm 1 Tbs light soy sauce 1 Tbs cooking caramel soy sauce (this is different to kecap manis and much thicker) – found in Asian grocers) 70g sugar 1/2-3/4 tsp salt 1 tsp white pepper *Mum used to steam the pork belly first so she could dice it easily but do save the juices to add to the stir fry so every drop of flavour can be savoured. Combine sugar & yeast in a small bowl. Add enough warm water to make a paste before stirring in 150ml warm water. Cover for 10 mins or until there’s evidence of froth on the surface. Combine the flour, baking powder, sugar & salt in a medium bowl and mix roughly with a whisk before making a well in the middle. Pour in yeast mix and add enough of the remaining warm water to knead into a pliable dough. It should be as soft as possible but not stick to an undusted work surface. Rest in a large oiled bowl & cover with a wet tea towel. Allow to double in size before using. Caption : Ok I finally got my shizen together this year & wrote a recipe for the retro Yeow trifle which is ‘special’ because it uses NO fresh ingredients bar the strawberries 🤔. Every time I’ve deviated ever so slightly into fancy, someone will comment “HOW INTERESTING YOU USED SOUR CHERRIES & HOMEMADE CUSTARD THIS YEAR” – code for “Why did you turn this into something unpredictable”. Anyhoo, i guess the moral is if it ain’t broke – enjoy! Merry Holidays everyone!!! ♥️⭐️ YEOW FAM RETRO TRIFLE 3 packets 🍓 or raspberry crystals 4 Tbs powdered gelatine or 10g sheet gelatine 1 x 6 pack mini jam rollettes, sliced 1.5cm 2 punnets strawberries, slice enough to cover the diameter of the trifle bowl, cut the rest into 1cm cubes. 825g tin sliced peaches, drained 2-3 cups custard (powdered kind – make using packet instructions or u can use home made creme patt of course) 1 cup thickened cream, whipped with 2 Tbs full caster sugar & 1 tsp vanilla or strawberry essence until medium – stiff peaks Make 2 packets of the jelly following the packet instructions but add the extra gelatine. Stir until all the crystals are dissolved then pour into a flat 25x20cm-ish tray or dish. Chill in fridge for 2 hours or until set firmly. Make the remaining packet of jelly using regular packet instructions. Set aside. Arrange the jam rollettes on the bottom of the triffle bowl (about 4L capacity). Pour the warm jelly mix over the rollettes making sure all the pieces are soaked through. Layer as follows: 1/2 of the custard, peaches, remaining 1/2 of the custard, strawberries, whipped vanilla cream. To finish, slice up your finger jello into cubes and rain them over the cream piling them as high as possible. Chill for 2 hours so the jelly in the bottom is set. Serve with a smol shovel, dive in and hope jelly cubes don’t wind up bouncing all over your mum’s carpet 🤭😚Likes : 12111

Caption : Home Style Fried Rice Tips! •When I say homestyle, I mean achievable indoors with frypans you already own. Authentic smoky fried rice is just not realistic on an electric stove so here’s how you still get a whole lot of delish without too much fuss. •A big general tip is to be looking out for a dry pan. To be clear, after you’ve cooked everything and about to add the rice there should be zero moisture in the pan. •Never have protein or veg cut bigger than 1cm dice as it doesn’t seal quickly and will keep leaching liquid into the pan which is then absorbed into the rice. Dry is key! •When it comes to stir frying don’t overcrowd the pan or it will be a steam fest and the rice grains won’t be nicely separated. There’s an issue of weight here too. If there’s too many ingredients flying around in the pan, the rice will be getting squished to mush. It’s better to divide the ingredients and cook multiple batches – you can transfer cooked batches into a rice cooker set on warm to keep it piping hot. •Of course, pan should be on high heat. The larger the surface area the quicker that moisture will evaporate. Pots would be a crime 😫. •Order of ingredients entering pan – oil, aromatics/aliums, protein, veg, rice, seasoning. •Never waste leftover rice. Always freeze it for a rainy day fried rice! •Any oil or even butter is fine. I just always use olive because I live in olive oil country and luuuurve it! •Add egg at the very end by making a well in the middle and adding a dash of sesame oil for flavour but also to stop the eggs from sticking. Caption : MALAYSIAN SPIRAL CURRY PUFFS Makes about 12 large pastries Guys, I’ve wanted to show you how to make these for the longest time but the reel took me SOOOO long to edit! Anyhoo, this is an incredibly delicious Malaysian snack I grew up which I swear is worth the trouble. If you want to skip the spiral dough which is actually very easy, buying ready made butter puff or making jaffles with the filling are also excellent options. Ask away in comments for more tips. Good luck! 1L rice bran oil for frying PASTRY OIL DOUGH 180 g plain flour 30 g butter softened 70 g lard OR vegetable shortening WATER DOUGH 250 g plain flour 50 g butter softened ½ tsp salt 1 Tbs sugar 120 ml water FILLING 1/4 cup olive oil 12 sprigs curry leaves stripped from the stem 2 large onions, peeled, 5mm dice 6 heaped Tbs Malaysian or Indian style meat curry powder 500 g chicken breast, diced finely OR course pork mince 200 g sweet potato, peeled 3mm dice 200 g potato, 3mm dice 2 tsp salt OR to taste 2 Tbs sugar 1 tsp chicken stock powder (optional) 4 hard boiled eggs, peeled & quartered (optional)8 METHOD To make the filling combine the oil, curry leaves (follow this -I put these in wrong order in the reel 😬) & onion in a large non-stick frypan then bring to a medium heat. Stir fry until curry leaves are popping & onions are soft. Add the curry powder & stir fry until very fragrant. Add the chicken & cook through before adding both potatoes. Keep stirring until the potatoes are tender. If it’s taking a long time, add a few tablespoons of water, cover & allow to steam for a few minutes then uncover to let water evaporate. So here’s the low down on why Grandma’s plastic bag ain’t melting, explained by @drmattagnew – thank u for letting us borrow your excellent brain 🪐💥. Now we can finally sleep in peace. And ppl please, of course I am not endorsing the use of this ‘appliance’. It’s obviously born of POVERTY so everyone please keep your bpa trigger knickers on and appreciate the science for just one moment! Also, sorry but the soundtrack WILL haunt you for days. “Basically, the melting point of the plastic is *higher* than the boiling point of the water. What this means is that water will heat up to 100C, then begin boiling and the temperature won’t ever go higher. Since 100C is lower than the melting point of the plastic, it won’t melt. It seems weird, but basically the heat from the flame will heat up the plastic, but once it reaches higher than the 100C, the heat will flow into the water (heat flows from hot to cold). Any additional heat added to the plastic will keep just flowing straight to the water so the plastic will also stay at 100C. So this will continue until all the water is boiled off. Caption : Magnolia Adventures Part 2. I’ve wanted to try this forever! The robust petals have a subtle ginger perfume & peppery flavour. I’ll post a tasting and recipe to use them in next! PICKLED MAGNOLIAS 4 magnolia buds, halved but not sliced all the way to stem 1 1/2 cups caster sugar 2 cups white or rice wine vinegar 1 tsp salt 1 bird’s eye chilli halved lengthways 2 x 5mm slices ginger, bashed 2-3 pieces of mandarin peel (orange part only) Stir sugar, salt and vinegar together until dissolved. Place the remaining ingredients in a clean glass jar, being careful not to bruise the petals. Submerge entirely in the pickling liquid. It’s ready to eat within a few hours. Caption : KUIH BANGKIT | Makes about 100 small biscuits Gong Hei Fat Choi everyone! To celebrate, I’m sharing another Nyonya Chinese New Year treat that brings back many childhood memories. It’s also been lovely to use another traditional wooden mold I inherited from mum. Kuih Bankit is a pandan coconut flavoured biscuit made with roasted tapioca flour which gives it a unique melt in your mouth texture. ♥️ 5 pandan leaves (found fresh or in frozen section of Asian grocers), cut into 6cm pieces 350g tapioca flour 1 large egg yolk 70g icing sugar 1/8 tsp salt 100-150g coconut cream, chilled in tin (Ayam brand if possible – found in most supermarkets) Red food colouring Preheat oven to 170*C FF. Scoop out only the thick part of the coconut cream which sits at the top of the tin and none of the liquid. Set aside. Cover pandan leaves with tapioca flour in a baking tray or heatproof dish. Roast the flour for 2 hours. During this process mix with a spatula at least twice to make sure the flour is roasting evenly. Cool completely. Remove pandan & press, DON’T SHAKE flour through sieve or you will have a dust storm! In a medium bowl whisk the icing sugar, yolk, salt & 100g of the coconut cream until combined (yes, this differs from the reel but a better way!). Whisk until soft & smooth. Add only 250g of the roasted tapioca flour. Squeeze together until the mix is just holding together as a single lump. If you take some mixture and squeeze it, it should just stay together but crumble easily when rubbed between your fingers. Add more coconut cream if needed. Cover with a moist towel. Preheat oven at 150*C FF. Dust the mold well with the leftover roasted tapioca flour before pressing in the dough firmly. Slice across the surface of the mold to remove excess dough. Knock the mold firmly on benchtop at an angle to remove the biscuits. Place them on a lined baking tray with 5mm gaps between biscuits. Bake for about 20 mins or until the centre is crisp. Cool then using a skewer or toothpick, decorate with dots of red food colouring. Store in airtight container for up to a month. Enjoy! Top by @annie_parker_upcyclingLikes : 8590

Hug your mothers hard for me and ENJOY ♥️🥰 Raspberry & Almond Croissant Pudding | Feeds 10 …………………………………………………………………………… Butter for greasing 3 large croissants, thickly sliced then torn 1 1/2 cups frozen or fresh raspberries (any berry you like really!) 2 Tbs dried currants Few Tbs raw sugar for crust 1/3 cup slivered almonds CUSTARD 3 large eggs 1/2 cup caster sugar Splash of vanilla 2/3 cup milk 2/3 cup cream Grease 2L capacity ceramic baking dish well. Preheat oven to 160-170*C FF. In a medium bowl whisk eggs and sugar well. Add remaining custard ingredients and whisk until combined. Add the croissant pieces and nudge them so they are submerged. Sprinkle half the raspberries & half the currants on the base of the dish, then arrange half the soaked croissant pieces to cover the fruit evenly. Repeat, then pour the remaining mixture over the top. Squidge it all down gently with your fingertips then sprinkle a generous layer of raw sugar evenly over the top. Sprinkle on the almonds evenly. Place the whole thing in a larger oven pan filled 1/2 way up the pudding dish height with hot water. Bake on the middle oven rack for 30-45 mins or until the top of the pud is deeply golden. Serve with sweetened pouring cream and add a dash of Frangelico if you’re feeling cheeky 😋Likes : 8473

If the banana leaf folding bizzo stresses you out, just follow recipe until dough balls are stuffed then simply flatten gently against a small square of oiled banana leaf. Caption : HAKKA STYLE DRIED SHRIMP & DAIKON CRYSTAL SKIN DUMPLINGS | Makes 20 This filling can also be made with yam bean and used in another Hakka (Mum’s side of the family) style dumpling with taro based wrappers or stir fried with taro gnocchi – a dish called Abacus Beads which was the thing that got me across the line in my 1st ever MasterChef audition 🥳. It is rich with umami from the dried shrimp, shiitake & oyster sauce and wrapped in a delightfully chewy dough that goes transparent upon cooling. Tip: when handling this dough quick gentle pressure when rolling and pinching is the secret to success. If you apply too much pressure, the dough becomes sticky.
