Archie Renaux Instagram – My brother @archierenaux3 fancies himself as a bit of a chef these days so we’ve decided to do a collab taco dish in time for taco Tuesday at the @roseandcrownnw5 next week. Archie tried a pork belly and watermelon taco in America and since becoming vegetarian, wanted to make a meat free version. We swapped pork for tofu and I made a Thai Palo พะโล้ sauce and slow cooked the tofu until it resembled tender meat. We then topped it with watermelon pickle to cut through the richness of the spices and wrapped in a corn tortilla. This might actually be my new favourite taco recipe on the menu.
It launches on the menu next TUESDAY, where we will be hosting Taco Tuesday at the @roseandcrownnw5.
