Atul Kochhar Instagram – We’re very excited to welcome chef @chefatulkochhar to Dishpatch. The Michelin-awarded chef behind restaurants including Tamarind and Benares, his cooking combines traditional culinary techniques from India and the best of British produce. For his Dishpatch debut, he brings two menus reflecting his elevated Indian cooking.
His first menu, A Journey Through India, starts with a chicken tikka pie – a signature dish Atul’s been cooking for 25 years! Then, a Keralan sea bass moilee flavoured with mustard seeds, turmeric and curry leaves. “The flavour profile is mild and rounded,” says Atul. “Perfect for anyone who loves korma.” Juicy lamb chops are rubbed in a Tamil Nadu spice mix with black cardamom and black stone flower. They’re cooked until crispy and tender, served with spiced lamb jus, cumin pulao rice and chickpea masala. For dessert, blueberry yoghurt pudding is baked and topped with almonds.
For his Kadhai Chicken Feast, start with sea bass fillets pan-fried and served on a creamy coconut sauce flavoured with fresh curry leaves. Next, tender charred chicken supremes alongside masala roast potatoes and a kadhai sauce made with tomatoes, garlic, coriander seeds, red chilli, and a pinch of fennel seeds for a little sweetness. To finish, his baked blueberry yoghurt pudding rounds out the meal.
