Matthew Pritchard Instagram – Green lentil soup 🥣🥣
Putting last weeks Spice of Life shop to good use. Back when I was a kid lentils were considered “hippy” food but as you grow up you realise the hippys knew the score when it came to cooking good healthy nutritious food.
100 grams of green lentils will provide you with protein, fibre, carbs, phosphorus, magnesium, iron, calcium perfect post training food.
Recipe:
1 onion
2 celery sticks
1 large carrot or 2 small
4 garlic
3 tomatoes
Thumb of ginger
400g green Lentils
100ml white wine
1,400ml vegetable stock
1 1/2 Tspn ground cumin
1 Tspn paprika
1 Tspn ground coriander
Salt & pepper
Method :
O splash of olive oil into a pan. Sweat off your onions, celery & carrots for about 5 mins.
Add your garlic and ginger, cook for a further few mins then add the chopped tomatoes and mix it all together.
Now add your spices and cook it all out for a few mins then use the white wine to deglaze the pan. Let the wine reduce by a quarter then add the green lentils. Mix it all together and then add the stock and let it simmer away for around 45 mins until the lentils are cooked.
Transfer half of the mixture to a blender and give it a good wazzing then tip it back into the rest of the soup in the pan and mix until it’s all combined. Serve with some chopped flat leaf parsley and get stuck in. Enjoy
