Calabacitas is a delicious plant-based Mexican dish packed with so many nutrients! The real star of this dish is zucchini as it contains many antioxidants, vitamins, water & lots of fiber to promote a healthy digestion ⭐️🥒

Ingredients:
3 medium Zucchinis/calabacitas
1 red pepper
3 medium tomatoes
Cilantro
1/4 onion
1/2 cup corn
1/2 cup chick peas
1/2 tbs avocado oil
1/2 tsp smoked paprika
1/4 tsp cumin
1/2 tsp coriander (optional)
1/2 cup water
Salt
Instructions:
1. Heat oil on a pan over medium heat.
2. Add onions. Sauté for 5 minutes or until onions become transparent.
3. Add tomato and red pepper stirring constantly for 3-4 minutes.
4. Season with smocked paprika, cumin and coriander.
5. Add water, zucchini, corn, cilantro, the chick peas and salt.
6. Mix well and allow everything to cook for about 5 minutes and bring to a simmer till the vegetables are tender.
