#PretendCookingShow: Pancakes (and espresso!) ☕️🥞 #KitchenAidAmbassador If you really want to make a Wednesday feel like a weekend, start your morning with easy homemade pancakes and any (or all, if you need it!) of your favorite espresso drinks you can make with your new @KitchenAidUSA Fully Automatic Espresso Machine. Americano? Flat White? Regular milk or plant-based? So many espresso options, all ready to explore at the push of a button. Oh, it’s joy. ♥️☕️♥️

LIGHT & FLUFFY PANCAKES (via @cooksillustrated)
Ingredients:
– 1 cup all-purpose flour
– 2 tsps sugar
– ½ tsp salt
– ½ tsp baking powder
– ¼ tsp baking soda
– ¾ cup buttermilk
– ¼ cup milk (plus a tablespoon or so extra if batter is too thick)
– 1 large egg, separated
– 2 Tbsp unsalted butter, melted
– vegetable oil for brushing griddle (I use butter! 🧈)

Directions:
1. Whisk dry ingredients in medium bowl.
2. Pour buttermilk and milk into 2-cup liquid measuring cup. Mix in egg. (If you want EXTRA fluffy pancakes, whisk egg white into milk mixture and mix yolk with melted butter, then stir into milk mixture. My kids prefer it the first way 🤷🏻♀️)
3. Dump wet ingredients into dry ingredients all at once; whisk until just mixed. Lumps are our friends.
4. Meanwhile, heat griddle or large skillet over medium high heat. Brush griddle generously with oil/butter. When water splashed on the surface sizzles, pour batter, about ¼ cup at a time, onto griddle, making sure not to overcrowd. When pancake bottoms are brown and top surface starts to bubble, ~2-3 minutes, flip cakes and cook until remaining side has browned, ~1-2 minutes longer.
5. Re-oil the skillet and repeat for the next batch of pancakes.
6. Yum.

Fluffy Dinner Rolls (via @melskitchencafe)
Ingredients
– 1 ¼ cups milk
– ¼ cup water
– 4 Tbsp salted butter, at room temperature or melted, plus more for brushing
– 2 Tbsp granulated sugar
– 1 Tbsp instant or active dry yeast
– 1 large egg
– 1 ¼ tsp salt
– 4 ¼ to 4 ½ cups AP flour

Instructions:
1. Heat milk in a saucepan over medium heat until milk is steaming. Pour into the bowl of your stand mixer fitted with the dough hook.
2. Add water, 4 Tbsp butter, and sugar. Let mixture cool until warm, 105-110℉ on an instant-read thermometer.
3. Stir in yeast and let rest for 5-7 mins until mixture is foamy.
4. Add egg, salt, and flour, starting with 3 ¾ to 4 cups flour, and mix, adding additional flour gradually, just until dough clears the sides of the bowl and forms a soft, sticky ball. Don’t over flour the dough.
5. Knead for 5-6 mins, until dough is soft and smooth.
6. Cover and let rise in a warm spot until doubled, ~1 hour.
7. Grease a 9×13 inch pan and set aside, lightly punch down the dough and turn out onto a lightly greased countertop.
8. Divide dough into 12 equal pieces. Roll each piece into a ball and place in the prepared pan, spacing ½ inch or so apart (four rows of three rolls.)
9. Cover with greased plastic wrap or with a towel and let rise until doubled, ~1 hour. The rolls should be very puffy with the sides touching.
10. Preheat the oven to 375℉. Place an oven rack in the middle position.
11. Bake rolls for 15-20 mins, until golden on top and bottom. Brush the tops of the rolls with additional melted butter immediately after removing them from the oven. Serve warm or let cool completely on the pan.
12. Yum.
