Halibut burgers
2 halibut fillets, 6 oz each, skin removed
1 tbsp salted butter
1 tbsp extra virgin olive oil
Fresh focaccia
Tarter sauce
2 tbsp mayo
1 tsp Dijon
1 tbsp relish
A dash of Tabasco
Coleslaw
1 cup coleslaw mix (shredded cabbage and carrots)
Juice of half a lemon
1 tbsp white wine vinegar
1 tsp good quality olive oil
Salt and pepper to taste
Quick Salad Dressing
1 tsp Dijon
1 tsp maple syrup
1 tsp balsamic vinegar
2 tbsp good quality olive oil
Mix up the ingredients for the tartar sauce in a bowl and set aside.
Mix up the ingredients for the coleslaw and set aside.
Season the fish with salt and pepper. Heat a medium sized frying pan over medium high heat. Add the butter and olive oil and fry the fish three minutes a side, basting with the butter and olive oil in the pan as you go.
To assemble, spread the tartar sauce on toasted focaccia. Top with halibut, coleslaw, and sliced avocado.
