I had a chance to visit Chino city in Nagano prefecture recently and learned how to make a local specialty called “Shimi” tofu, or FROZEN tofu, along with other “Shimi” specialities! 😍
Unable to produce vegetables in their icy winter climate, the people of Chino city adapted to produce naturally freeze-dried foods called “Shimi” that take advantage of the cold nights that allow foods to freeze, and the warm sunlight during the day that not only dries and preserves the foods, but also gives it a delightful new texture! 😋🙌🏼
I learned so much, ate so much and discovered a side of local Japan I hadn’t yet seen (or even tasted)! Very glad to have discovered Chino city❤️
