Before the next episode I wanted to pay my homage to one of my culinary heroes. I don’t think many people are aware of what a colossal influence David Burke has had on the culinary world, but it was massive. The man is a culinary genius, thinks out of the box and many of his ideas have been copied or inspired many always been fascinated by his creativity. Having mutual friends, I would ask them to tell me about the man himself. Some of his crazy ideas, like poaching a whole salmon in a dishwasher for then prince Charles for some aristocrats in Europe ( turns out they didn’t have a fish poacher! Problem solved) this lead to cooking turkey to perfection in a dishwasher running 2 cycles (do not add dishwasher liquid!!) any rate a great thrill to hangout with the man himself and get all the stories straight from the horses mouth! It was an honor to have him as a guest judge, and for all the chefs that got to cook for him. Thank you @mbctopchef for making it happen and thank you @chefdavidburke for your time and wisdom. We all learned a lot by your presence! Oops!! in the background, assistant director @reine_sili making sure we are all good as the cold dessert winds picked up.
The Climate has clearly changed! Everywhere I’ve been lately seems to be experiencing unique weather changes. It’s going to get a lot worse before it gets better if we do not act now. Auckland this December (their summer) was bitterly cold, raining everyday with a cyclone that eventually turned into a national disaster flooding the country causing incredible damage to the extent that they closed the airport. Dubai was unseasonably cold at the end of January. San Francisco, seemed colder with winds I never recalled. LA, cold, rain with flash flood warnings… Now in Cairo, it was warm, then like a flick of a switch, thunder & lightning and now the temperature is dropped. #climatechange

Guess who’s back in town? To any of you foodies in Bangkok between 1-6 of November, you don’t want to miss the 10th Anniversary of Amazing Chefs at So Bangkok! It’s taken me a while to post some of the amazing people I got to meet, converse with, often just being in their presence was as humbling as it was inspiring. Much of my early childhood was spent in this city and not all of it pleasant. Yet returning here always feel like I’m coming home, however many cities feel like home for me. (Maybe attending 6 schools on three continents by the age of 10 imparted such feelings, helping me make ‘the world my oyster’. Urban High School a block down from Haight Ashbury seriously helped mold me, inspiring me to learn for the sake of learning while imparting a great sense of civic responsibilities. It’s the place of my longest and everlasting childhood friend and the companionship that came with it. It’s where I first picked up a guitar and learned to accept that passion requires a lot of time, dedication and patience. It’s where I got my start cooking professionally and was the springboard for my adventures to Vîetnam. It’s the one city that most tourist prefer within the United States and ‘ I left my heart in San Francisco’ wouldn’t have been a hit if it wasn’t true! So in a nutshell, it’s nice to be back! @urbanhschool @chefhkeller #sanfrancisco

Very privileged and grateful to experience The Desert Camp at Caravanserai, Al Sahara Desert Resort. It was another legendary night of poetry and performances under the stars with a heavyweight lineup of poets and performers. Definitely one of the most unique event hosted by the Emirates literary Festival with the most incredible hospitality that show cases nothing but generosity and care.
