Of course the winter has her fruits. Like any season.
But as life pertains to persimmons, I suggest you:
Pluck the fruit in the crook of autumn’s tired arm.
Peel, polish, and preserve.
To create dried persimmon’s in the art of hoshigaki you’ll find it best to:
Find fresh persimmons. Peel them lengthwise with a fruit peeler or even your grandmothers pocket knife.
Hopefully you’ve retained the branch for hanging, but if not, simply insert a short screw into the persimmons wider half.
Attach twine and hang fruit from a curtain rod or clothes rack or anything sturdy and horizontal (except, perhaps a lazy barn cat)
Massage gently and daily to encourage crystalline sugars.
Discourage fruit flies by spritzing with vinegar or employing a box fan.
After months, you’ll have a deeply sweet, sticky sunset hued obsession and confection.
