Ming Tsai Instagram - When you don’t have a Breakfast MingsBings but you have Chinese food, you make a leftover Chinese Food Omelette for breakfast! 🍳

INGREDIENTS
6 eggs 
Leftover Chinese food (up to 2 cups)
¼ - ½ cup shredded cheddar cheese
2-3 tbsp neutral oil 
Kosher salt and freshly ground black pepper

INSTRUCTIONS
1) Crack eggs into large bowl, whisk to combine whites and yolks. Season with S&P. 
2) Heat oil in a large, nonstick skillet over medium-high heat. Add leftover Chinese food and heat through. 
3) Next add eggs to the pan. Using a rubber spatula immediately mix the ingredients together. Keep moving the eggs around to get the eggs to incorporate evenly with the stir fry. 
4) Once the eggs start to set, turn down to medium heat and cover with a lid. This will cook the top of the omlet (2 minutes). 
5) Remove the lid and sprinkle cheese evenly over the top, and cover again to melt the cheese (1 minute). 
6) Remove the lid and using your rubber spatula, gently fold the omelet in half, transfer to a plate. 
7) Cut in half and serve with leftover heated up rice. Enjoy!

He still works full time, is a real genius and leader in designing with composite materials, think golf shafts to missiles.  He still cooks. This is him in front of his Yale dorm window that he has a picture of with Mom in 1951.  He wanted the picture for Mom’s Celebration of Life next weekend. And yes, he is the best father too, Happy Father’s Day Pops!! #attitudeofgratitude

Ming Tsai Instagram - Start getting ready for summer with Chef @Mingtsai’s Shrimp Pineapple Summer Rolls! ☀️ 

INGREDIENTS
1 package vermicelli rice noodles
1 pound small  shrimp, deveined/shells and tails removed
2 tbsp garlic, minced
2 tbsp ginger, minced
4 scallions, green and white slice and separated 
½ lime, juiced
1 tbsp fish sauce 
¼ cup thai basil, hand ripped
1/2 pineapple, cut into 4” x ¼” spears 
1 package Bahn Trang rice paper spring roll wrappers 
3 tbsp neutral oil, like grapeseed
2 tsp olive oil 
Kosher salt and freshly ground pepper

INSTRUCTIONS
1) Add rice vermicelli to a large bowl and cover with boiling water. Let sit to soften. 
2) Meanwhile, heat a non-stick skillet on medium-high heat, add 3 tbsp of neutral oil to the pan. Once hot add garlic, ginger, and 2 tbsp scallion whites. Cook, stirring constantly for 2 minutes. Season with S&P. 
3) Add 2 tsp of olive oil to the pan and add shrimp in an even layer. Season with S&P, cook 1-2 minutes until shrimp start to turn pink. Flip over and let shrimp cook for about 2-3 more minutes until they are pink throughout. Remove from heat and place them in a bowl, allowing them to come to room temperature. 
4) Strain noodles. Add back to a separate bowl, and let this come to room temperature. Once cooled, use kitchen shears to cut the noodles to break up the long pieces. Add thai basil, lime juice, fish sauce, and 2 tbsp of scallion greens. 

ROLLING INSTRUCTIONS
1) Fill a large bowl with hot tap water about ⅔ of the way up. Dip wrapper in water and allow to get malleable (about 30 seconds). 
2) Take the wrapper out of the water and lay it on a clean dish cloth. Line up ¼ cup of noodles along the bottom edge of the wrapper, place 2 spears on either side of the noodles. Then add 3-4 shrimp on top of the noodles. 
3) Fold the bottom edge over the filling and pull back towards you. Roll it on itself and fold in the edges. Continue to roll until you reach the other edge. 

DIPPING SAUCE

Dipping Sauce Ingredient list
½ lime, juiced 
2 tsp Sambal Oelek Fresh Ground Chili Paste
1 tsp fish sauce 
1 tbsp scallion greens, sliced 

Dipping Sauce Instructions
1) Mix everything together. Dip your spring rolls in the sauce and Enjoy!

Ming Tsai Instagram - Scallion pancakes are fantastic for many things, one of them being a delicious twist on pizza! 🍕⁠

Ingredients⁠
1 package Scallion Pancakes, found frozen at Asian markets⁠
1 bell pepper, cut into 1 ½ inch pieces⁠
½ onion, cut into 1 ½ inch pieces⁠
1 portobello mushroom⁠
1 zucchini, cut lengthwise into ¼ inch slices ⁠
Coconut spray⁠
Kosher salt and freshly ground black pepper⁠
Skewers, soaked for 1 hour in water⁠
⁠
Instructions⁠
1) Carefully spray your grill with coconut spray and add scallion pancakes. Flip your pancakes once they have grill marks and are GBD. Remove when both sides are crispy. ⁠
2) In the meantime, skewer your onion and bell pepper pieces. Spray all your vegetables with coconut spray and season with S&P. Add to grill and close the lid, Grill about 2-3 minutes on each side. ⁠
3) Remove vegetables from the grill, roughly chop them and mix together. ⁠
4) To build your pizzas, spread ¼ cup tzatziki on each pancake and top with your mixed vegetables. Cut into slices. Enjoy! ⁠

Tzatziki: Ingredient List⁠
1 cup greek yogurt ⁠
1 tsp garlic, minced⁠
1 tsp ginger, minced ⁠
1 tbsp scallion greens, sliced⁠
¼ cup cilantro, roughly chopped ⁠
¼ cup thai basil, roughly chopped⁠
2-3 tbsp chili crisp, plus or minus depending on your spice preference⁠

Tzatziki: Instructions⁠
In a bowl, mix all ingredients together. Adjust spice level by adding more chili crisp. Serve on Scallion Pancake Pizza. Enjoy! ⁠

Ming Tsai Instagram - It’s AAPI Heritage Month AND Celiac Awareness Month and we’re celebrating with Chef @Mingtsai’s Gluten-Free Spring Roll recipe! 😋

Ingredient List
1 package Square Bhan Tran Rice Paper
1 pound ground chicken 
1 cup shredded carrots
2 tbsp ginger, minced
4 scallions, greens and whites sliced
1 tbsp garlic, minced 
3 tbsp fish sauce, (we used Three Crab Fish Sauce) 
¼ cup thai basil, hand ripped 
Freshly cracked pepper, to taste 

Filling Instructions
1) In a large bowl add raw chicken, carrots, ginger, scallions, garlic, fish sauce and thai basil. Mix together thoroughly. 

Rolling Spring Rolls
1) Fill a large bowl with warm tap water about ⅔ of the way up. Dip wrapper in water and allow to get malleable (about 30 seconds). 
2) Take the wrapper out of the water and lay it on a clean cutting board, so it looks like a diamond (one point of square facing you). Place about ¼ cup of filling along the bottom edge of the wrapper. 
3) Fold the bottom tip over the filling and pull back towards you, making a thin log. Roll it on itself until you reach the center and then fold in the edges. Continue to roll until you reach the other edge. 

Cooking Spring Rolls
1) Line a plate with a few layers of paper towels, set aside near your stove top. 
2) Heat a deep skillet or pot with about 1 ½ - 2 inches of canola oil over medium-high heat for 5 minutes to bring the oil to the temperature. If you are using a thermometer, the oil should register 350 degrees.
3) To test, dip one spring roll into the hot oil. If the oil is hot enough it should bubble immediately around the spring roll. Heat oil a few minutes longer if needed. 
4) Once the oil is to temp, add 3-4 spring rolls to the oil, making sure there is enough room around each roll so they do not stick together. Fry for 3-4 minutes until golden, brown and delicious. 
5) Remove from oil and put on a plate with paper towels to drain. Repeat with the remaining rolls. 
6) Serve over a bed of lettuce with Chili Crisp Lime Dipping Sauce. Enjoy!

Ming Tsai Instagram - Skewers are a summer staple. ☀️ Next time you fire up the grill, switch it up with Iron Chef @mingtsai’s Sichuan Chicken Skewers recipe!⁠

Ingredient List
Wooden Skewers, soaked for 1 hour prior to cooking 
1 pound Boneless, Skinless Chicken Thighs cut into 1 inch cubes
½ Walla Walla or Vidalia Onion, cut into 1 inch chunks 
1 Bell pepper, cut into 1 inch pieces 
Mala Spice Rub (recipe below) 
Sesame Dipping Sauce (recipe below) 
2 Tbsp, scallion greens sliced 
Sesame seeds for garnish

Instructions
1) Add chicken cubes to a large bowl, coat liberally with the Mala Spice Rub. Mix with a gloved hand to make sure to rub in all the spices. 
2) Thread a chunk of onion onto the skewer (push down about 1 inch from the end), then add 2 pieces of chicken, a bell pepper and repeat until the skewer is full. Do this with remaining ingredients. 
3) Spray your grill with coconut oil and place the skewers on the grill and cover. Cook the chicken for about 10-14 minutes with the lid closed, turning and spraying once halfway through, until the chicken is GBD (cook to an internal temperature of 165 degrees F). 
4) Remove skewers from the grill, drizzle with Sesame Dipping Sauce, top with scallion greens and sesame seeds. Enjoy! 

Mala Spice Rub
Ingredient List
4 Tbsp Sichuan Peppercorns
2 Tbsp Dried Fennel 
2 Tbsp Black Peppercorns
6-8 Whole Dried Red Chillies
1 Tbsp Kosher Salt 

Instructions
Combine all ingredients in a mortar and pestle or a spice grinder. Grind until a rough powder is formed.

Sesame Dipping Sauce
Ingredient List
¼ cup Sesame Paste 
¼ cup Black Vinegar 
2 Tbsp Soy sauce 
2 tsp chili oil 
2 Tbsp garlic, minced
2 Tbsp ginger, minced 
2 Tbsp scallion greens, sliced 

Instructions
Place all ingredients in a bowl, mix to combine.

Ming Tsai Instagram - Get ready to fire up the grill and treat yourself to Chef @Mingtsai’s mouthwatering Salmon with Orange Soy En Papillote recipe! 🔥🍊

INGREDIENTS
1 package Banana Leaves
12-16 oz Salmon, cut into 2 even pieces
1 cup cooked Couscous
1 cup Raw Spinach 
1 bunch Thai Basil 
2 Tbsp Sweet Soy Sauce
1 Orange, zest and juice into one bowl
EVOO
2 Tbsp scallion greens, sliced
Kosher salt and freshly ground pepper

INSTRUCTIONS
1) Cut banana leaves so you have 2 pieces about 18 inches in length and 12 inches in width, place on a dry surface with the long side facing you. 
2) Season salmon with S&P on both sides. 
3) Make Orange Glaze: mix zest, juice and sweet soy in a bowl
3) In the center of your banana leaves add ½ cup of couscous in a mound, hand rip ½ cup spinach on top of the couscous, and then add about 3 thai basil leaves. Top with your salmon, placing it so the long side is facing you. Spoon ½ the of Orange Glaze over salmon. 
4) Fold in the right and left edge of the banana leaf over the salmon, then fold the top and bottom underneath. Creating a pouch (repeat for second piece of salmon). 
5) Place on grill, close lid and grill for 15-17 minutes (thermometer should read 135-140 when finished). 
6) Remove from grill and place on a plate. 
7) To serve: carefully cut open your pouches with kitchen scissors. Top with the rest of the Orange Glaze, a drizzle of EVOO and scallion greens. ENJOY!

INGREDIENTS⁠
1 package Lumpia Wrappers, defrosted ahead of time so you can peel them easily⁠
2 Bananas, peeled and cut into eighths (cut banana into quarters lengthwise, then cut the quarters in half widthwise)⁠
1 bar 70% dark chocolate, finely chopped⁠
About 1 cup peanut butter⁠
1/2 cup salted peanuts, roughly chopped⁠
Vegetable Oil for frying ⁠
Suggested garnishes: ice cream, chocolate sauce, yogurt ⁠
⁠
INSTRUCTIONS⁠
1) Place lumpia wrapper on a dry cutting board with the point of one of the corners facing towards you (so it looks like a baseball diamond from above). ⁠
2) Spread 1 tbsp peanut butter widthwise 1 inch from the bottom point of the wrapper. ⁠
3) Place a banana spear on top of the peanut butter, sprinkle with chocolate, and top with 1/2 tbsp peanuts. ⁠
4) Roll your spring roll: Bring the bottom point closest to you (home plate) to the pitcher’s mound, and roll it once on itself. Egg wash the remaining edges. Fold first and third base in towards the middle of the roll and roll it the rest of the way. Letting it rest on the seam. ⁠
5) In a heavy saucepan or cast iron pot, heat vegetable oil to 375 degrees Fahrenheit. Gently place spring rolls in oil, about 5 at a time (do not overcrowd your pot). Cook 4-5 minutes until golden, brown, and delicious (GBD). ⁠
6) Remove from oil and place on a plate lined with paper towels to drain. ⁠
7) Serve hot with a thick yogurt, ice cream, or chocolate sauce. Top with more chopped peanuts. ENJOY! ⁠

INGREDIENTS: Tostadas⁠
- 1 package Dumpling Wrappers⁠
- Cheddar cheese⁠
- Leftover Dumpling Filling (see recipe below) ⁠
- Neutral oil⁠
- Kosher salt and freshly ground black pepper⁠
⁠
INSTRUCTIONS⁠
1) Have a small bowl of water and spoon ready on your workstation. ⁠
2) Lay out your dumpling wrapper on a dry surface. Place about 1 tbsp of cheddar cheese in the center of each dumpling wrapper. ⁠
3) Using a spoon, place about 1 ½ tbsp of your dumpling filling on top of the cheese. Wet the back of your spoon with water. Using the back of your spoon spread the dumpling filling gently over the cheese to the edges of your wrapper. Repeat to make the desired amount of tostadas. ⁠
4) Add about ⅛ of an inch of neutral oil in a cast iron skillet over medium-high heat. Once hot, place tostadas wrapper side down until GBD (golden brown and delicious). Flip over to cook chicken and melt cheese. Once cooked, place on a paper towel lined plate to drain excess oil. Repeat until all tostadas are cooked. ⁠
5) To serve, place tostadas over greens and ENJOY! ⁠

- 1 pound of ground chicken⁠
- 1 ½ cups shredded carrots⁠
- 6 scallions, sliced greens and whites⁠
- 4 tbsp fish sauce⁠
- ¼ cup ripped thai basil (smack the basil to release flavor before ripping) ⁠
- Freshly ground black pepper to taste⁠

1) In a large bowl mix all ingredients together. ⁠
⁠
Pro Tip: To test the flavor of your filling, take about a tsp of your filling and microwave it until it is cooked through. Taste and adjust the seasoning to your liking. ⁠

Ming Tsai Instagram - My next Cooking Live event with @familyreach is tomorrow, and I can’t help but take a stroll through memory lane and remember why I got started with such a great non-profit.

In 2010, my journey with Family Reach began when Executive Director Carla Tardif introduced me to Darlene, a young woman dying of osteosarcoma. One of Darlene’s last wishes was to come to Blue Ginger and eat a meal I cooked for her and her family. Without hesitation, I said yes. Fulfilling Darlene’s wish for a meal at Blue Ginger with her family and seeing the joy it brought them amidst their struggles was beyond moving.

Shortly after, Carla shared Raquel and Mikalo’s story. When Raquel’s son was diagnosed with cancer, she made the difficult decision to leave her job and support him through his treatment. As expenses piled up, they were eventually compelled to seek shelter in a homeless facility, where Mikalo continued his chemotherapy. The doctor emphasized the necessity of a bone marrow transplant for Mikalo’s survival. However, due to the shelter’s conditions, the procedure couldn’t be performed safely without a sterile environment post-transplant. Family Reach immediately stepped in, got them out of the homeless shelter and into their own apartment. Upon hearing this story, I knew I had to get involved and help beyond cooking a nice meal for families in the restaurant. That was 14 years ago and I haven’t looked back since.

1 tbsp cornstarch (mixed with 2 tbsp water to make a slurry) ⁠
¼ tsp garlic Powder ⁠
¼ tsp chili Powder ⁠
8 oz bag plant-based cheese⁠
Kosher salt and freshly ground black pepper⁠
⁠
INSTRUCTIONS⁠
1) In a medium saucepan bring milk to a simmer. ⁠

INGREDIENTS
6 eggs 
Leftover Chinese food (up to 2 cups)
¼ - ½ cup shredded cheddar cheese
2-3 tbsp neutral oil 
Kosher salt and freshly ground black pepper

INSTRUCTIONS
1) Crack eggs into large bowl, whisk to combine whites and yolks. Season with S&P. 
2) Heat oil in a large, nonstick skillet over medium-high heat. Add leftover Chinese food and heat through. 
3) Next add eggs to the pan. Using a rubber spatula immediately mix the ingredients together. Keep moving the eggs around to get the eggs to incorporate evenly with the stir fry. 
4) Once the eggs start to set, turn down to medium heat and cover with a lid. This will cook the top of the omlet (2 minutes). 
5) Remove the lid and sprinkle cheese evenly over the top, and cover again to melt the cheese (1 minute). 
6) Remove the lid and using your rubber spatula, gently fold the omelet in half, transfer to a plate. 
7) Cut in half and serve with leftover heated up rice. Enjoy!

Ming Tsai - 2.5K Likes - Start getting ready for summer with Chef @Mingtsai’s Shrimp Pineapple Summer Rolls! ☀️ 

INGREDIENTS
1 package vermicelli rice noodles
1 pound small  shrimp, deveined/shells and tails removed
2 tbsp garlic, minced
2 tbsp ginger, minced
4 scallions, green and white slice and separated 
½ lime, juiced
1 tbsp fish sauce 
¼ cup thai basil, hand ripped
1/2 pineapple, cut into 4” x ¼” spears 
1 package Bahn Trang rice paper spring roll wrappers 
3 tbsp neutral oil, like grapeseed
2 tsp olive oil 
Kosher salt and freshly ground pepper

INSTRUCTIONS
1) Add rice vermicelli to a large bowl and cover with boiling water. Let sit to soften. 
2) Meanwhile, heat a non-stick skillet on medium-high heat, add 3 tbsp of neutral oil to the pan. Once hot add garlic, ginger, and 2 tbsp scallion whites. Cook, stirring constantly for 2 minutes. Season with S&P. 
3) Add 2 tsp of olive oil to the pan and add shrimp in an even layer. Season with S&P, cook 1-2 minutes until shrimp start to turn pink. Flip over and let shrimp cook for about 2-3 more minutes until they are pink throughout. Remove from heat and place them in a bowl, allowing them to come to room temperature. 
4) Strain noodles. Add back to a separate bowl, and let this come to room temperature. Once cooled, use kitchen shears to cut the noodles to break up the long pieces. Add thai basil, lime juice, fish sauce, and 2 tbsp of scallion greens. 

ROLLING INSTRUCTIONS
1) Fill a large bowl with hot tap water about ⅔ of the way up. Dip wrapper in water and allow to get malleable (about 30 seconds). 
2) Take the wrapper out of the water and lay it on a clean dish cloth. Line up ¼ cup of noodles along the bottom edge of the wrapper, place 2 spears on either side of the noodles. Then add 3-4 shrimp on top of the noodles. 
3) Fold the bottom edge over the filling and pull back towards you. Roll it on itself and fold in the edges. Continue to roll until you reach the other edge. 

DIPPING SAUCE

Dipping Sauce Ingredient list
½ lime, juiced 
2 tsp Sambal Oelek Fresh Ground Chili Paste
1 tsp fish sauce 
1 tbsp scallion greens, sliced 

Dipping Sauce Instructions
1) Mix everything together. Dip your spring rolls in the sauce and Enjoy!

Ingredients⁠
1 package Scallion Pancakes, found frozen at Asian markets⁠
1 bell pepper, cut into 1 ½ inch pieces⁠
½ onion, cut into 1 ½ inch pieces⁠
1 portobello mushroom⁠
1 zucchini, cut lengthwise into ¼ inch slices ⁠
Coconut spray⁠
Kosher salt and freshly ground black pepper⁠
Skewers, soaked for 1 hour in water⁠
⁠
Instructions⁠
1) Carefully spray your grill with coconut spray and add scallion pancakes. Flip your pancakes once they have grill marks and are GBD. Remove when both sides are crispy. ⁠
2) In the meantime, skewer your onion and bell pepper pieces. Spray all your vegetables with coconut spray and season with S&P. Add to grill and close the lid, Grill about 2-3 minutes on each side. ⁠
3) Remove vegetables from the grill, roughly chop them and mix together. ⁠

Caption : Scallion pancakes are fantastic for many things, one of them being a delicious twist on pizza! 🍕⁠ ⁠ Ingredients⁠ 1 package Scallion Pancakes, found frozen at Asian markets⁠ 1 bell pepper, cut into 1 ½ inch pieces⁠ ½ onion, cut into 1 ½ inch pieces⁠ 1 portobello mushroom⁠ 1 zucchini, cut lengthwise into ¼ inch slices ⁠ Coconut spray⁠ Kosher salt and freshly ground black pepper⁠ Skewers, soaked for 1 hour in water⁠ ⁠ Instructions⁠ 1) Carefully spray your grill with coconut spray and add scallion pancakes. Flip your pancakes once they have grill marks and are GBD. Remove when both sides are crispy. ⁠ 2) In the meantime, skewer your onion and bell pepper pieces. Spray all your vegetables with coconut spray and season with S&P. Ingredient List
1 package Square Bhan Tran Rice Paper
1 pound ground chicken 
1 cup shredded carrots
2 tbsp ginger, minced
4 scallions, greens and whites sliced
1 tbsp garlic, minced 
3 tbsp fish sauce, (we used Three Crab Fish Sauce) 
¼ cup thai basil, hand ripped

Filling Instructions
1) In a large bowl add raw chicken, carrots, ginger, scallions, garlic, fish sauce and thai basil. Mix together thoroughly. 

Rolling Spring Rolls
1) Fill a large bowl with warm tap water about ⅔ of the way up. Dip wrapper in water and allow to get malleable (about 30 seconds). 
2) Take the wrapper out of the water and lay it on a clean cutting board, so it looks like a diamond (one point of square facing you). Place about ¼ cup of filling along the bottom edge of the wrapper. 
3) Fold the bottom tip over the filling and pull back towards you, making a thin log. Roll it on itself until you reach the center and then fold in the edges. Continue to roll until you reach the other edge. 

Cooking Spring Rolls
1) Line a plate with a few layers of paper towels, set aside near your stove top. 
2) Heat a deep skillet or pot with about 1 ½ - 2 inches of canola oil over medium-high heat for 5 minutes to bring the oil to the temperature. If you are using a thermometer, the oil should register 350 degrees.
3) To test, dip one spring roll into the hot oil. If the oil is hot enough it should bubble immediately around the spring roll. Heat oil a few minutes longer if needed. 
4) Once the oil is to temp, add 3-4 spring rolls to the oil, making sure there is enough room around each roll so they do not stick together. Fry for 3-4 minutes until golden, brown and delicious. 
5) Remove from oil and put on a plate with paper towels to drain. Repeat with the remaining rolls. 
6) Serve over a bed of lettuce with Chili Crisp Lime Dipping Sauce. Enjoy!

Ming Tsai - 1.4K Likes - Skewers are a summer staple. ☀️ Next time you fire up the grill, switch it up with Iron Chef @mingtsai’s Sichuan Chicken Skewers recipe!⁠

Ingredient List
Wooden Skewers, soaked for 1 hour prior to cooking 
1 pound Boneless, Skinless Chicken Thighs cut into 1 inch cubes
½ Walla Walla or Vidalia Onion, cut into 1 inch chunks 
1 Bell pepper, cut into 1 inch pieces 
Mala Spice Rub (recipe below) 
Sesame Dipping Sauce (recipe below) 
2 Tbsp, scallion greens sliced 
Sesame seeds for garnish

Instructions
1) Add chicken cubes to a large bowl, coat liberally with the Mala Spice Rub. Mix with a gloved hand to make sure to rub in all the spices. 
2) Thread a chunk of onion onto the skewer (push down about 1 inch from the end), then add 2 pieces of chicken, a bell pepper and repeat until the skewer is full. Do this with remaining ingredients. 
3) Spray your grill with coconut oil and place the skewers on the grill and cover. Cook the chicken for about 10-14 minutes with the lid closed, turning and spraying once halfway through, until the chicken is GBD (cook to an internal temperature of 165 degrees F). 
4) Remove skewers from the grill, drizzle with Sesame Dipping Sauce, top with scallion greens and sesame seeds. Enjoy! 

Mala Spice Rub
Ingredient List
4 Tbsp Sichuan Peppercorns
2 Tbsp Dried Fennel 
2 Tbsp Black Peppercorns
6-8 Whole Dried Red Chillies
1 Tbsp Kosher Salt 

Instructions
Combine all ingredients in a mortar and pestle or a spice grinder. Grind until a rough powder is formed.

Sesame Dipping Sauce
Ingredient List

¼ cup Black Vinegar 
2 Tbsp Soy sauce

2) Season salmon with S&P on both sides. 
3) Make Orange Glaze: mix zest, juice and sweet soy in a bowl
3) In the center of your banana leaves add ½ cup of couscous in a mound, hand rip ½ cup spinach on top of the couscous, and then add about 3 thai basil leaves. Top with your salmon, placing it so the long side is facing you. Spoon ½ the of Orange Glaze over salmon. 
4) Fold in the right and left edge of the banana leaf over the salmon, then fold the top and bottom underneath. Creating a pouch (repeat for second piece of salmon). 
5) Place on grill, close lid and grill for 15-17 minutes (thermometer should read 135-140 when finished). 
6) Remove from grill and place on a plate. 
7) To serve: carefully cut open your pouches with kitchen scissors. Top with the rest of the Orange Glaze, a drizzle of EVOO and scallion greens. ENJOY!

INGREDIENTS⁠
1 package Lumpia Wrappers, defrosted ahead of time so you can peel them easily⁠
2 Bananas, peeled and cut into eighths (cut banana into quarters lengthwise, then cut the quarters in half widthwise)⁠
1 bar 70% dark chocolate, finely chopped⁠
About 1 cup peanut butter⁠
1/2 cup salted peanuts, roughly chopped⁠
Vegetable Oil for frying ⁠
Suggested garnishes: ice cream, chocolate sauce, yogurt ⁠
⁠
INSTRUCTIONS⁠
1) Place lumpia wrapper on a dry cutting board with the point of one of the corners facing towards you (so it looks like a baseball diamond from above). ⁠
2) Spread 1 tbsp peanut butter widthwise 1 inch from the bottom point of the wrapper. ⁠
3) Place a banana spear on top of the peanut butter, sprinkle with chocolate, and top with 1/2 tbsp peanuts. ⁠
4) Roll your spring roll: Bring the bottom point closest to you (home plate) to the pitcher’s mound, and roll it once on itself. Egg wash the remaining edges. Fold first and third base in towards the middle of the roll and roll it the rest of the way. Letting it rest on the seam. ⁠
5) In a heavy saucepan or cast iron pot, heat vegetable oil to 375 degrees Fahrenheit. Gently place spring rolls in oil, about 5 at a time (do not overcrowd your pot). Cook 4-5 minutes until golden, brown, and delicious (GBD). ⁠
6) Remove from oil and place on a plate lined with paper towels to drain. ⁠
7) Serve hot with a thick yogurt, ice cream, or chocolate sauce. Top with more chopped peanuts. ENJOY! ⁠

In 2010, my journey with Family Reach began when Executive Director Carla Tardif introduced me to Darlene, a young woman dying of osteosarcoma. One of Darlene’s last wishes was to come to Blue Ginger and eat a meal I cooked for her and her family. Without hesitation, I said yes. Fulfilling Darlene’s wish for a meal at Blue Ginger with her family and seeing the joy it brought them amidst their struggles was beyond moving.

Shortly after, Carla shared Raquel and Mikalo’s story. When Raquel’s son was diagnosed with cancer, she made the difficult decision to leave her job and support him through his treatment. As expenses piled up, they were eventually compelled to seek shelter in a homeless facility, where Mikalo continued his chemotherapy. The doctor emphasized the necessity of a bone marrow transplant for Mikalo’s survival. However, due to the shelter’s conditions, the procedure couldn’t be performed safely without a sterile environment post-transplant. Family Reach immediately stepped in, got them out of the homeless shelter and into their own apartment. Upon hearing this story, I knew I had to get involved and help beyond cooking a nice meal for families in the restaurant. That was 14 years ago and I haven’t looked back since.

INGREDIENTS⁠
1 cup plain oat milk (not flavored)⁠
1 tbsp cornstarch (mixed with 2 tbsp water to make a slurry) ⁠
¼ tsp garlic Powder ⁠
¼ tsp chili Powder ⁠
8 oz bag plant-based cheese⁠
Kosher salt and freshly ground black pepper⁠
⁠
INSTRUCTIONS⁠
1) In a medium saucepan bring milk to a simmer. ⁠
2) Add the cornstarch slurry into the heated milk and bring the mixture to a boil, whisking frequently to prevent the milk from burning.⁠
3) Add S&P, garlic and chili powder. Whisk in cheese a handful at a time until melted. ⁠
4) Use it as a dip or drizzle over MingsBings. Enjoy!⁠
