I loooove crispy skin on fish, but I am not here for the grease-mist and smell in my New York apartment kitchen (I love-hate the modern open concept design). This gives you crisp, crunch and flavor with much less work (and smell). And, if you can make a grilled cheese you can make this! Check it out on Epi’s YouTube channel. Oh and the best part, you can swap in any bread, any fish, and season your fish with anything you like. I kept it simple (salt, thyme, garlic) to highlight the technique, but seriously use whatever you have/like and make it your own!
