Tadiq (or tahdig) is a traditional Persian dish known for its crispy, golden crust, which forms at the bottom of the pot when cooking rice. The name “tadiq” literally means “bottom of the pot” in Persian. This crunchy layer is often made by cooking rice with a bit of oil or butter, and sometimes with the addition of ingredients like thinly sliced potatoes, bread, or even yogurt mixed with saffron to create different flavors and textures. Once the rice is fully cooked, the pot is inverted, revealing the crispy tadiq, which is highly prized and often served as the centerpiece of a meal.
