Recipe:
High Protein Chickpea salad
Ingredients
Boiled chickpeas- 1 cup
Salt & pepper to taste
Red chillie powder – a pinch
Chaat masala – 1/2 tsp
Grated carrot- 1 small
English Cucumber- sliced thick – 1
Celery – 1/2 a stalk (chopped)
Green onions(sliced) – 2
Freshly chopped parsley (2 tbsp)
Black Olives (sliced) – 5-6
For garnish
Toasted Pumpkin seeds- 2 tbsp
Pomegranate seeds – 2 tbsp
Dressing
Hung curd – 1/2 cup
Chaat Masala – 1/2 tsp
Cumin powder – 1/4 tsp
Extra-virgin olive oil- 1 tbsp
Apple cider vinegar- 1 tsp
Garlic cloves- 2 (minced)
Salt & freshly ground black pepper to taste
Method
In a pan, heat oil, add the boiled chickpeas. Add the seasonings and the dry spices. Toast till slightly golden & crunchy
Now take a bowl, add the hung curd, chaat masala, cumin pd & salt. Whisk till smooth and creamy.
Then add vinegar, olive oil & garlic & whisk till smooth. Then, in a bowl, add the toasted chickpeas, celery, carrots, spring onion greens, black olives & parsley. Mix well.
Now for the assembly,
Spread the curd mixture on a nice platter, top with the prepared chickpeas mixture. Top with some toasted pumpkin seeds and pomegranate seeds for a pop of colour.
Place sliced cucumbers & pomegranate seeds on the side & serve immediately.
