Stuffed Corn Muffins
Ingredients:
2 boxes corn muffin mix
2/3 cup milk (box instructions)
2 large eggs (box instruction)
6 medium eggs
1 teaspoon black pepper
4 pre cooked breakfast sausages chopped
6 slices provolone cheese
Cooking spray
Method: preheat the oven to 400 degrees. Spray a jumbo muffin tin with cooking spray and set aside.
In a large bowl combine the corn muffin mix with the milk, the eggs, the pepper. Stir and fold in the sausage.
Spray a jumbo muffin tin with cooking spray. Divide the batter evenly amount the muffin tin. Add an egg to each cup. Top with a slice of provolone.
Bake until edges and top are golden and center is set, about 25-30 minutes.
Cool in the pan for 15 minutes then remove and finish cooking on a cooling rack OR you can eat them all right away!
