Lemon Chicken Soup 🍋☺️💛 This has been my favourite meal lately because it is so comforting and tasty. I hope you try it 🫶🏼 Ingredients: – 1 cellery bunch – 6 carrots – 1 onion – 2-3 inch piece of fresh ginger, peeled and minced – 3-5 cloves of garlic, minced – 2 cartons of bone broth – A couple bay leaves – rosemary (fresh or dried) – thyme (fresh or dried/ground) – 1 cup rice – Pulled chicken (I used 2 small breasts worth) – 3 eggs – 3 tbsp lemon juice – salt n pepper 1. Wash and finely chop veggies and sautée them in your soup pot with olive oil, garlic, ginger and salt and pepper. 2. After cooking the veggies down until onions are somewhat translucent (15- 20min), add your broth. 3. Add your seasonings: rosemary, thyme, bay leaves and anything else you want. I used about 1tsp of rosemary and thyme but add however much you like. Cayenne is good too if you like a little spice! 4. Bring the soup to a boil and add your rice. Stir the rice into the soup. Cover and simmer for 10-15 minutes or until the soup has thickened and rice is cooked. 5. Turn off the heat and let the soup cool while you complete the next steps: 6. Roast chicken breast in the oven for 30 minutes at 375. Pull the chicken breast using two forks and add your pulled chicken to the soup 7. In a bowl, whisk eggs and lemon juice together. 8. Temper the egg mixture by adding a little bit of soup broth to the egg mixture while stirring. Continue to add more broth to the mixture to bring the heat of the mixture up without curdling it. Once you’ve added a ladle or two worth of soup broth, you’re good to go. Poor the egg mixture/broth into the soup pot. Stir. 9. Add lots of pepper to taste and maybe some salt. Taste it and your heart will know 🙂 10. Serve and enjoy 🫶🏼
