valentines dinner/lunch Recipe with @farmerschoiceke Starter : pigs in a blanket Main course : pork loin chops with mashed potatoes Salad: strawberry bacon salad INGREDIENTS: For the Mashed Potatoes: • 6 Large potatoes (russet or Yukon gold), peeled and cubed • 4 tbsp butter • ½ cup milk (or heavy cream) • Salt & pepper to taste • Optional: 2 cloves garlic, minced For the Pork Loin Chops: • 4 pork loin chops • 1 tbsp olive oil • 2 tbsp butter • 2 cloves garlic, minced • ½ tsp paprika • ½ tsp dried thyme (or rosemary) • Salt & pepper to taste For the Pork Piggy Blankets: • 6 farmers choice chipolatas • 6 slices of streak bacon • 1 tbsp honey or maple syrup (optional, for glaze) For the Bacon Strawberry Lettuce Salad: • 4 cups mixed lettuce (romaine, arugula, or spinach) • 6 strawberries, sliced • 6 strips crispy bacon, crumbled • ¼ cup chopped cucumbers • 2 tbsp balsamic glaze or dressing/ lemon juice . INSTRUCTIONS: 1. Make the Mashed Potatoes: • Boil potatoes in salted water for about 15 minutes or until fork-tender. • Drain and mash with butter, milk, salt, and pepper. Add garlic for extra flavor. 1. Cook the Pork Loin Chops: • Season chops with salt, pepper, paprika, and thyme. • Heat olive oil in a skillet over medium-high heat. Sear chops for 3-4 minutes per side. • Add butter and garlic, basting the chops for another minute. • Rest for 5 minutes before serving. 2. Make the Pork Piggy Blankets: • Wrap each sausage with a slice of bacon and place on a baking sheet, seam-side down. • Brush with honey or maple syrup for a sweet glaze. • fry for 5-8 minutes or until the bacon is crispy. 4. Prepare the Bacon Strawberry Salad . • In a large bowl, toss the Rockets strawberries, crumbled bacon, feta cheese, and nuts. • Drizzle with balsamic glaze or dressing before serving. . Season with black pepper & salt 5. Make the Mashed Potatoes • Boil potatoes in salted water for about 15 minutes or until fork-tender. • Drain and mash with butter, milk, salt, and pepper. Add garlic for extra flavor. Serve everything together for a flavorful, well-balanced meal!
