Ingredients:
7oz (half package) angel hair pasta or spaghetti *choose a pasta that is high in protein*
1-2 Chipotle peppers
1/4 tofu block
1/4 medium onion
3 tomatoes
1 cup of water
Salt
*Vegan cream (optional)
*Avocado (optional)
*Cilantro (optional)
Instructions
1. Blend the tomatoes, onion, chipotle peppers, water and salt. Blend until you have a smooth tomato-chipotle sauce.
2. In a medium saucepan heat the avocado oil over medium heat. Once hot add the fideo. Stir often and cook until the pasta begins to turn a golden brown color. This will give the pasta a delicious nutty flavor.
3. Next add carefully the tomato sauce. Stir until well combined. Allow to simmer over medium heat until nearly all of the sauce has been absorbed by the pasta.
