Here is how to make this dish⬇️

Ingredients
• 3 pounds small/medium potatoes
• 3 tablespoons white wine vinegar
• 1/4 cup extra-virgin olive oil
• 2 tablespoons mustard
• 1 teaspoon salt
• ½ teaspoon freshly ground black pepper
• ½ small red onion , chopped.
• 2 tablespoons minced fresh parsley
• 6-8 plant-based bacon strips

Instructions
1. Cut the potatoes in medium pieces.
2. Put the potatoes in a pot and bring to a boil over high heat, add 1 tablespoon of salt, and cook the potatoes until tender, about 15-20 minutes or until fork tender. Drain well.
3. In a pan fried the plant based bacon and set aside. 
4. In the same pan add the olive oil and onion till the onion turns golden, then add the vinegar, mustard, salt and pepper and mix until everything is well combined, around 3 minutes.
5. Drizzle the dressing over the potato mixture and gently toss. Add the minced parsley and toss again. Season with more salt and pepper to taste. Serve warm.
6. Keeps in the refrigerator for 3-4 days.
