Braised Beef 🍽️ w a side of steamed rice & collard greens that were leftover from a previous dinner out w some friends 🔁 remixed into a collard green-kimchi stew 🍲 Love an uncomplicated dish that is an absolute flavor bomb! 💣 Marinade: Ginger Scallion Garlic Pear Soy Sesame oil Blk pepper Mirin [realized I didn’t have any so made a similar flavor profile by simmering dry white wine w simple syrup] Marinate the beef overnight or as long as posss, I used osso because I looove the marrow flavor and they are very cost effective, short ribs and oxtail will work great as well! Sear the beef in a heavy bottom pot and your fav veggies [i used spring onion, carrots & turnips] add beef stock, cover, cook low and slow Allow the braising beef to rest in the jus so that the protein can relax and absorb up all that goodness in the pot. Serve as is, orrrr strain and reduce liquid to glaze. Finish w sliced scallions and toasted sesame seeds. This is a great dish to cook for a group or as meal prep to have in the fridge for a couple days. Have a great weekend! 🤗

A love letter to the season 💌 Crispy duck breast, a condiment of charred spring onion, duck fat roasted dates and mandarin segments with a splash of banylus vinegar. Mandarin orange juice reduction and a wilted salad of dandelion greens, with toasty Marcona almonds, and the bright bite of candied mandarin peels. For the duck- it’s roasted with a lil smashed garlic and the leaves from the citrus. One fruit; used multiple ways- each technique offering a unique texture and flavor that all echo each other. 🧡🍊
