Here’s the recipe of the vegan Mayo that you can use in sandwiches and rolls.
Ingredients:
1/2 cup soy milk (unsweetened, plain)
1 tbsp plain vinegar (white or apple cider vinegar)
1 tsp mustard (Dijon or yellow mustard)
1/2 tsp salt (adjust to taste)
1 cup neutral oil (sunflower, canola, or vegetable oil)
Optional Add-ins:
1 tsp lemon juice (for extra tang)
1 clove garlic (for garlic mayo)
Instructions:
Blend the base:
In a blender or food processor, combine soy milk, vinegar, mustard, and salt. Blend on low speed for a few seconds until well mixed.
Add oil gradually:
While blending on low, slowly drizzle in the oil. The mixture will start to emulsify and thicken into a creamy mayo. This step is crucial—adding the oil slowly helps achieve the right texture.
Check consistency:
Once thickened, taste and adjust salt, vinegar, or mustard if needed. If it’s too thick, you can add a splash of soy milk to thin it out.
Store:
Transfer the mayo to a clean jar or airtight container. It will thicken further when refrigerated. Store in the fridge for up to 7–10 days.
