Also called Asparagus Chicory, or Catalognia Chicory in Italy where it comes from, specifically the area around Rome. It’s pretty easy to find in Western Europe, but not so much here. The outer leaves look like long, thin dandelion leaves with the sawtooth shape, and taste kinda similar.
The “Punterelle” are the hollow shoots that grow in clusters in the center of these outer leaves. These are usually eaten raw in salads while the darker green outer leaves are typically added to soups and stews or sautéed.
I know some people are not big anchovy fans (but why?) but trust me, this salad and dressing are so delicious you won’t even think about it. The puntarelle is a little bitter and the crunchy shoots have enough water content to balance out the dressing. All you’ll taste is the most delicious salad you’ve ever eaten! If you can’t find puntarelle (which even I usually can’t), try this with another chicory like endive, I promise you will love it!
