Recipe:
Ingredients:
Olive oil- 1 tsp
Onion(finely chopped) – 1 medium
Garlic( sliced) – 4-5
Button mushrooms(sliced)- 200 gm
Salt & white pepper to taste
2 tbsp white wine
2-3 sprigs thyme
2 – 3 cups boiling water
1/4th cup warm milk
Method :
Take a sauce pot, and heat a dash of olive oil over medium heat. Add the garlic and sauté till golden. Then add the onions and sauté till softened.
Now add the sliced mushrooms (reserve some for garnish) to the pot. Season with salt and white pepper. Sauté until the mushrooms release their moisture and begin to soften.
Now pour in the white wine to deglaze the pan, scraping up any bits stuck to the bottom. Let the wine reduce slightly.
Toss in the thyme and add the boiling water. Bring the mixture to a boil and let it simmer for 5-10 minutes, allowing the flavors to infuse and the liquid to reduce for a thicker texture.
Now remove from heat and let the mixture cool slightly. Then, blend it into a smooth purée in a mixer grinder jar. Do not use a hand blender unless you don’t mind a coarse texture.
Return the blended soup to the pot. Add the warm milk and simmer gently to combine, do not boil to ensure that the milk doesn’t curdle.
Ladle the soup into bowls and garnish with the reserved sliced mushrooms and a few sprigs of thyme.
