Ingredients:
– Salmon Filet (about 8oz pp)
– Sushi Rice (about 1/2 cup pp)
– EVOO
– 1/2 tsp salt
-1/2 tsp black pepper
-1/2 tsp ginger powder
-2 tsp garlic powder, divided in half
-1 tbs soy sauce
-1 tsp fish sauce
-2 tsp seasoned rice vinegar
-1/4 cup mayo
-2 avocados sliced
-2 scallions sliced
-2 tbs cilantro chopped
– Japanese furikake seasoning
– Sriracha mayo or chili sauce to taste
– Nori Sheets for serving
Preheat your oven to 375 degrees. Drizzle some olive oil on a baking sheet, place your salmon fillet skin inside down on the baking sheet, and then season with olive oil, salt, pepper, the ginger, and half of the garlic powder. Bake your salmon in the oven for about 20 minutes, depending on how thick your fillet is or how many pieces you have. The key is to keep checking on it so that it is cooked all the way through and opaque but not dry.
Meanwhile, prepare your sushi rice. I cannot stress enough what a good investment a rice cooker is, but you can always cook according to package directions. Do not forget to rinse your rice in cold water until the water mostly runs clear.
While your salmon and rice are cooking, slice up your avocado, as well as your scallions and cilantro, and prepare everything for assembly.
When your salmon is finished, remove the meat and shred with a fork in a bowl. Mix in the mayo, the other half of the garlic powder, soy sauce and fish sauce. Taste for seasoning and feel free to add a little more salt and pepper if you desire. Get a baking dish and oil it, or spray with nonstick cooking spray.
When the rice is finished cooking create a layer about an inch to 2 inches thick in the bottom of your baking dish. Spread the salmon mixture on top. Top with Furikake seasoning if you desire.
Raise the oven temp to 400 and bake in the oven for about 10 to 15 more minutes. Remove from the oven, allow to cool for five minutes and then top with your avocado slices, your drizzle of sauce, and your scallion and cilantro mixture. Serve with Nori sheets, enjoy!
