Healthy Valentine’s Coconut Cookies
Ingredients
1¼ cup Desiccated Coconut ultra thin, unsweetend
¾ cup Almond Flour
3 tablespoons Canned Coconut Milk stir can before measuring
1/3 Cup Maple Syrup
Optional
¼ teaspoon Almond Extract
1 pinch Salt
To decorate the cookies
10 dried cranberries 1 per cookie
Instructions:
1️⃣ Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper. Lightly grease the paper with a little cooking spray.
2️⃣ In a mixing bowl, combine ultra-fine desiccated coconut, almond flour, maple syrup, and canned coconut milk (plus any extras you’d like to add!).
3️⃣ The dough should be moist and stick together when pressed. If it feels too dry and crumbly, mix in a bit more maple syrup. Too wet? Add a little extra almond flour until it holds.
4️⃣ Lightly grease a small cookie scoop, pack in the dough firmly, and release onto the baking sheet. Repeat until all cookies are shaped, leaving a little space between each.
5️⃣ Gently press each cookie with your palm, adding a cranberry to the center as you go. If the edges crack, just reshape them with your fingers.
6️⃣ Bake for 12 minutes or until golden brown.
7️⃣ Let them cool on the tray before transferring to a wire rack. Store in an airtight container in the fridge for up to 4 days—if they last that long!
