RECIPE
adapt this to make what you already have in your cabinets work, so easy!
– 2 cups diced onions
– 4 garlic cloves diced
– 1 cup diced peppers
– 1/4 cup olive oil
– 2 (35oz) cans of stewed tomatoes
– 3 (15oz) can of any beans
– 2 Tbsp of tomato paste
– 3/4 cup stock
– 2 Tbsp of Chilli powder (up to 4)
– 1 Tbsp ground cumin
– 1 Tbsp dried red pepper flakes
– 1 tsp dried oregano
– 1 Tbsp salt
– 1/2 tsp ground black pepper
– 1 Tbsp sugar
– 1/4 cup of cream
– 4 cups of cooked shredded or ground meat
– Cheese & onion for toppings
DIRECTIONS
1. Cook the meat slightly under and set aside
2. In a big pot add the oil then cook the onion and peppers for 5 min. Add the garlic, chilli powder, cumin, pepper and red pepper flakes. Add more oil if needed.
3. Add stewed tomatoes, tomato paste, oregano, beans, stock, salt, sugar and meat. Reduce heat to low and simmer for and hour.
