Spring veg season is so awesome and so short! The best way to keep the party going (IMO) is to pickle the young produce you can get your hands on.
When I saw @blackforager talk about pickling magnolia blossoms it reminded me of Myoga, or “Japanese ginger” buds that I love but don’t see often. I started testing last season with petals but this year got my hands on some buds that hadn’t opened yet! I didn’t want to take advantage of the owner’s generosity (want to be invited back next year) but got a nice amount without compromising the beauty of their scenery.
Simple pickling liquid:
2c rice vin
1.5C H20
.5C sugar
1T kosher salt
8-10 peppercorns (I used Kampot peppercorns for their floral notes but use whatever you have!)
/-2T Sliced shallot and ginger to echo and enhance the magnolia flavor
I’m going to let these sit for a week and will report back with their progress in my stories!
