Ingredients:
• 2 tbsp oil
• 1 medium onion, chopped
• 3 cloves garlic, chopped
• 1 green chili, chopped (adjust to taste)
• 1 cup fresh coriander leaves
• Salt, to taste
• ½ tsp black peppercorns
• 3 tbsp plain yogurt (curd)
• 4 boiled eggs
• ½ tsp turmeric powder
• ½ tsp chili powder
• ½ tsp salt (for seasoning eggs)
• ½ tsp fennel seeds
• 2 green cardamom pods
• ½ cup milk
• 2 tbsp double cream
Instructions:
1. Prepare the Masala Base:
• Heat 1 tbsp oil in a pan. Add chopped onion, garlic, and green chili. Sauté until soft and golden.
• Transfer this mixture to a blender. Add coriander, salt, peppercorns, and yogurt. Blend into a smooth paste.
2. Spice the Eggs:
• Lightly score the boiled eggs. Toss them with turmeric, chili powder, and salt.
• In the same pan, heat 1 tbsp oil. Fry the eggs until slightly golden. Remove and set aside.
3. Make the Curry:
• In the same pan, add fennel seeds and cardamom. Sauté for a few seconds until fragrant.
• Pour in the blended masala paste and sauté for 3–4 minutes until the oil starts to separate slightly.
• Add milk and stir well to combine. Let it simmer for 2–3 minutes.
4. Finish and Serve:
• Add the fried eggs back to the pan and let them soak up the flavors for another 2 minutes.
• Stir in the double cream and cook for 1 more minute.
