Curd: 113g
Baking soda: ½ tsp
Baking powder: 1 tsp
Oil: 38g
Mango purée: 10g
Milk: 10g
Sugar: 63g
All-purpose flour: 83g
🧑🏻🍳Mango Purée:
Mango pulp: 100g
Sugar: 20g
🧑🏻🍳Mango Mousse:
Whipped cream: 100g
Mango purée: 30g
🧑🏻🍳Method:
– Mix baking soda & powder into curd. Add milk, mango purée, and oil
– Add sugar and flour
– Bake at 180°C in OTG (lower rod only) till golden
– Whip cream and mix in mango purée for the mousse
– Core the cupcakes, fill with mango, frost with mousse (nozzle 1M)
