Last week Saturday I had the honor of celebrating my mother’s “50th.” It came five years late but it was right on time. At 55, God allowed me to give her the kind of celebration we couldn’t afford back then, and I feel so blessed to have done it while she’s alive, strong, and able to truly enjoy it. When I think of where we’re coming from a time when my mom was embarrassed, looked down upon, even disgrace and now I see her smiling, radiant, celebrated and honored, my heart overflows with gratitude. This is the woman I’ve had by my side my whole life. My biggest cheerleader. My forever supporter. Every historic achievement starts with preparation, and last week Friday, we took a major step toward history. Carried out the first dry run for the largest pot of Nigerian Jollof rice ever, and it was such a learning experience. From testing the massive 22,600 Ltrs custom-made pot to fine-tuning our cooking process, every detail is coming together.
