Zara McDermott Instagram – MY CURRENT FOOD OBSESSION! ๐ TAKEAWAY STYLE BUTTER CHICKEN ๐๐ฅ๐ This recipe went pretty viral, and the reason is because itโs probably the best butter chicken youโll ever have (in my opinion)๐ค no joke, I make it at least once a week at home at the moment ๐ this serves 2-3 people. for the chicken marinate I cut 500g chicken thighs into bitesize pieces. Then I add 1tbsp lemon juice, 1 tbsp garlic paste, 1tbsp ginger paste, 1tsp garam masala, 1 tsp paprika, 1tsp ground cumin, 1/2 tsp chilli powder (1tsp if you want more spice), 1/2tsp salt and 150g plain yoghurt. Mix all together, cover over and leave in the fridge for a few hours! I like prepping this in the morning.
Then, about an hour or so before you want to eat, start the prep of the curry base. Melt 2 heaped tbsp of butter over a low heat until melted and golden. Add 1 diced onion and cook for 10/12 mins until soft on a low heat. I then add what we used earlier on the chicken marinate. 1 tsp minced garlic or garlic paste, and one tsp ginger paste and mix. Then add 1tsp garam masala, 1tsp paprika, 1/2tsp tumeric, 1tsp ground cumin. Give it a mix and allow to cook for a min to release the spices. Then add 400g passata and 2tbsp tomato puree. Cook for a few mins mixing well. To get that authentic takeaway feel, I like to blend! You can use a hand blender or a nutribullet style blender and empty the sauce into that. Place back into the pan and add in the chicken from the fridge and mix well.
At this point, you want to leave the chicken to simmer in the sauce for around 40 minutes on a low heat. Keep the lid on but keep an eye on it, stirring every 5/10 mins. After 40 min the chicken should be cooked and falling apart! At this point I add some honey or sugar to sweeten the sauce, (about 2tsp), about 2tbsp ground almonds (optional but gives you a proper restaurant / takeaway feel!) and then 150ml cream.
