Michelle Madrigal Instagram – Cozy Fall Apple Crisp 🍏

Filling
• 3 apples, peeled & cubed (I used green & red)
• 1 tbsp apple cider vinegar (or lemon juice)
• A few tbsp water
• 1 tsp cinnamon
• ¼ tsp nutmeg
• 3–4 tbsp maple syrup
• 1 tbsp butter or ghee (I used non dairy butter)
• Pinch of sea salt

Crisp/Crumble
• ⅓ cup almond flour
• ⅓ cup all-purpose flour (use gluten-free if you like)
• ⅓ cup rolled oats (gluten free)
• ½ cup brown sugar (I used coconut sugar)
• ⅓ cup melted coconut oil (or butter)
• A handful of walnuts or pecans, chopped
• 1 tsp cinnamon
• Pinch of cardamom/nutmeg/pumpkin spice
• Salt to taste

Directions
1. Heat oven to 400°F.
2. In a skillet, combine apples, vinegar, and water. Cover and let simmer on low until apples soften.
3. In a separate bowl, mix all crisp topping ingredients. You can use a blender for a quick pulse or just stir by hand if you like it chunky.
4. When apples are soft, stir in maple syrup and butter. Let simmer gently, stirring occasionally, until it thickens into a paste.
5. Transfer the apple mixture to a small oven-safe dish. Spread the crisp topping evenly over the apples.
6. Bake for about 20 minutes, or until the top is golden and crunchy.
