Jamie Gray Hyder Instagram – We worked hard in the a.m., and got to explore #Umbria in the afternoons, including Assisi 🕊️, Montefalco🍷, and Spoleto 🎭. @michaelwtrotter learned that he DOES, in fact, like truffles, as long as they’re fresh, local, in season, and being served by locals, over a soft scramble, in the Italian countryside 💁🏻‍♀️. I learned that mortadella is better over a fire, and that fresh laurel blows dried bay leaf outta the water.
