As a kid my aunt would always make Sopa de Fideo, almost on a daily basis so growing up this was a comfort dish for me. Here’s my spin on a classic Mexican soup…
I let the broth reduce down to a sauce and added chickpeas, zucchini, onions, carrots and celery then garnished it with avocado and cilantro. Still working on this one but it will definitely end up in my book 🤫
