Courteney Cox Instagram – Happy #NationalPastaDay!
Here’s one of my favorites: Pasta Alla Checca

*Fresh garlic chopped (lots)
*Roma or cherry tomatoes
*Buffalo mozzarella (in water)
*Basil (lots)
*Olive oil
*Penne pasta
*Fresh grated parmigiana
*Salt and pepper

1. Chop tomatoes (de-seed if you want), add basil + salt and pepper, place in bowl. Cover and let marinate.
2. Slice a ton of garlic and brown in olive oil.
3. Boil water/cook pasta.
4. Drain water from mozzarella and cube.
5. When pasta is done, drain + add tomatoes/basil mixture with any juice made from the marinating tomatoes.
6. Add cut mozzarella.
7. Add warm garlic olive oil.
8. Add parmigiana + salt and pepper to taste.

Optional: add red pepper flakes if you want a little kick.
