#PretendCookingShow: Caramel Corn. My mom’s friend Helen made caramel corn and sent it to my sisters and me every autumn for years. Eventually, she passed down her recipe and asked us to keep up the tradition. Well, that little notecard is tucked away in a book somewhere, but this recipe from @kingarthurbaking is pretty darn close. Try this fast train to goodness for a treat that tastes just like fall, thanks to our wonderful Mrs. Epps. 🍁🍿

@kingarthurbaking Caramel Corn
Ingredients:
– 15 cups popped corn (½ cup kernels, unpopped)
– 2 Tbsp molasses
– 1 cup brown sugar, packed
– 8 Tbsp salted butter, cold
– ¼ cup light corn syrup
– ½ tsp baking soda
– salt

Directions:
1. Preheat oven to 200°F and line two large rimmed baking sheets with parchment.
2. Pop your corn! 🍿 Pour the popcorn into a large bowl, remove any unpopped kernels.
3. In a 3 quart saucepan over med-high heat cook the molasses, brown sugar, butter, and corn syrup, stirring occasionally until sugar dissolves. Boil syrup, stirring occasionally, for 5 mins until it reaches 250°-255°F on digital or candy thermometer. It will darken slightly.
4. Remove saucepan from heat and add baking soda (and I add some salt!); stir well (the mixture will foam).
5. Immediately (and carefully0 pour the hot syrup over the popped corn and stir until corn is well coated.
6. Spread the hot caramel corn on the sheet pans. Bake at 200°F for 1 hour, stirring every 15 minutes.
7. Remove from oven and let cool before storing in an airtight container.
8. Yum.

Not all superheroes wear capes. Maria Lopez is an Early Childhood Coordinator with @savethechildren. During her regular visits to families’ homes in Yakima Valley, Washington, Maria provides parents/caregivers with books, developmentally appropriate toys, encouragement, and tools to help parents learn and grow with their children— setting them up for kindergarten readiness and a lifetime of learning.

Once a month Maria and Darla, little Olivia’s mom, complete an Ages and Stages Questionnaire to assess Olivia’s development, and again and again Maria was confronted with results that she knew just didn’t add up. The pediatrician was quick to dismiss Darla and Maria’s concerns, saying Olivia would grow out of the stage she was in. But with Maria in her corner, Darla fought to have Olivia assessed further. Sure enough, they learned Olivia was on the Autism spectrum.

Maria has been able to work with Darla and provide a revised curriculum with developmental activities to help Olivia grow & thrive. Olivia is now happily playing with other children, learning to process in her own time, and will be ready to start kindergarten when the time comes. Thank you, Maria. ♥️

Downeast Maine Pumpkin Bread by @allrecipes
(makes 1 loaf or 3 mini loaves)
Ingredients:
– 1 small sugar pumpkin (or ½ 15oz can)
– 2 eggs
– ½ cup safflower oil
– 1 ¼ cups sugar
– 1 ¾ cups all-purpose flour
– 1 tsp baking soda
– ½ tsp salt
– ½ tsp ground cinnamon
– ½ tsp ground nutmeg
– ¼ tsp ground cloves
– ⅛ tsp ground ginger

Directions:
1. Preheat oven to 350°. Cut pumpkin in half, stem to base. Remove seeds and pulp. Bake face down until tender, ~45 mins.
2. Scrape pumpkin meat from shell halves and puree in a food processor or food mill.
3. Grease and flour three mini loaf pans.
4. In the bowl of a stand mixer, add 1 cup pumpkin puree, eggs, oil, and sugar. Mix until well blended. In a separate bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger. Add dry ingredients to wet ingredients until just combined. Pour into prepared pans.
5. Bake for ~25 minutes, until a toothpick comes out clean.
6. Wrap and gift! 🎁
