Ingredients
2 pre-made refrigerated pie doughs
7 oz Aged Castello Havarti Cheese, grated
2 lbs pink lady apples, peeled, cored, and cut into 1/2 inch wedges
1 Tbsp flour
1/4 c white sugar
1/4 c brown sugar
1/4 tsp salt
1 tsp cinnamon
1/2 tsp cardamom
1/4 tsp nutmeg
1 tsp vanilla bean paste
1 Tbsp lemon juice
1 egg, beaten
Raw cane sugar, for sprinkling
Apricot jam for glazing
Directions
-Pre heat oven to 350°
-Unroll one pie dough onto a parchment lined baking sheet
-Evenly sprinkle the dough with #Castello Havarti cheese
-Unroll the remaining pie dough and place it on top of the cheese
-Gently press the edges of the dough together to create a seal. Using your hand, gently press down on the dough across the entire surface area
-Place cheese stuffed dough into the refrigerator
-In a large mixing bowl, toss together the apples, flour, sugars, salt, cinnamon, cardamom, nutmeg, vanilla, and lemon juice until well mixed.
-Take the pie dough out of the refrigerator and pour seasoned apples into the center of the dough leaving a 1 1/2 inch border
-Fold the edges of the dough up and over the apples leaving most of the fruit exposed
-Brush the dough with the beaten egg and sprinkle with raw cane sugar
-Bake for 1 hour. Let cool for 10 min. Transfer galette to a cooling rack and brush the apples with some apricot jam
